    Easy Chicken Broccoli Casserole with Cream of Mushroom Soup is one of those dinners I lean on when the day has been a lot and I still want something warm and real on the table. You know the feeling, you open the fridge, you see some leftover chicken and a bag of broccoli, and you just want dinner to happen without a big mess. This is creamy, cozy, and honestly hard to mess up. It also makes great leftovers, which is basically a gift to your future self. If you are feeding picky eaters, this is one of those sneaky veggie wins.  Making a Simple Chicken Casserole When I say “simple,” I mean it. This is the kind of casserole you can pull together while the oven preheats, and it still tastes like you put in real effort. The cream of mushroom soup does a lot of heavy lifting here, giving you that creamy sauce without needing to make a roux or anything fancy. My favorite part is how flexible it is. You can use rotisserie chicken, leftover grilled chicken, or even quickly cooked chicken breasts. Same with the broccoli. Fresh is great, frozen is great, whatever you have. What you will need One quick note from real life: if you are using frozen broccoli, thaw it and squeeze out extra water. If you skip that, the casserole can get watery. I learned that the messy way. How Do You Make Chicken and Broccoli Casserole from Scratch? People hear “from scratch” and think it has to be complicated. For me, from scratch just means you are mixing the ingredients yourself and seasoning it the way you like, instead of relying on a boxed kit. Using cream of mushroom soup still totally counts as scratch cooking in my kitchen because dinner needs to be doable. The basic idea is simple: chicken plus broccoli plus creamy sauce plus cheese, baked until bubbly. You can add rice to stretch it, or keep it lighter without. Either way, the goal is a casserole that scoops nicely and tastes like comfort. If you want another chicken and broccoli vibe but with a different flavor, check out easy chicken and broccoli pasta. And if you are in the mood for a slightly different casserole twist, chicken and broccoli cheesy casserole is also a fun one. “I made this on Sunday and my kids actually asked for seconds. The leftovers heated up perfectly the next day. This one is going into our regular rotation.” The “scratch” part that matters most is seasoning. Cream of mushroom soup is tasty, but it needs a little help. I always add garlic powder and black pepper at minimum. Sometimes I add a tiny pinch of paprika if I want more warmth. How to Cook Chicken and Broccoli Casserole This is the part where dinner comes together fast. I am going to explain it like I would if you were standing in my kitchen with me. Step by step directions 1) Heat your oven to 375 F. Lightly grease a casserole dish so clean up is easier later. 2) If your broccoli is fresh, steam or microwave it just until it turns bright green. You want it tender but not mushy because it will cook more in the oven. If it is frozen, thaw and drain it well. 3) In a big bowl, mix cream of mushroom soup with a splash of milk or broth. This keeps the sauce creamy instead of thick and pasty. Then stir in your seasonings. 4) Add cooked chicken and broccoli. If you are using cooked rice, mix it in now. Then stir in most of the cheese, saving a handful for the top. 5) Spread everything into the casserole dish. Sprinkle the rest of the cheese on top. If you want a crunchy topping, sprinkle crushed buttery crackers or breadcrumbs mixed with a little melted butter. 6) Bake about 25 to 30 minutes, until it is bubbling around the edges and the top looks golden. Let it sit 5 to 10 minutes before serving so it sets up and scoops better. This is one of those meals where letting it rest is not “extra.” It really does help the texture. If you scoop it immediately, it can look a bit loose. Still delicious, just looser. On nights when I want a cozy soup to go with it, I love pairing comfort meals with something like warm cozy creamy chicken and mushroom soup. That combo is pure comfort.
