Peri Peri Rice

peri peri chicken recipe cravings always seem to hit right when I am staring into the fridge thinking, what can I make that feels exciting but still easy? That is exactly where this Easy Portuguese Chicken and Rice Recipe comes in. It is cozy like a one pan dinner should be, but it has that bright spicy kick that wakes up your whole plate. I make it on busy weeknights, and also when friends come over because it smells amazing while it cooks. If you have chicken, rice, and a few bold pantry staples, you are basically halfway there.

What Is Portuguese Chicken (Peri Peri)?

Portuguese chicken, often called peri peri chicken, is chicken cooked with a spicy tangy pepper sauce that usually includes chili, garlic, citrus, and a little oil. The flavor is the big deal here: it is spicy, yes, but also zippy and savory, not just heat for the sake of heat.

Some people think it is only a restaurant thing, but it is totally doable at home. I like making it as an Easy Portuguese Chicken and Rice Recipe because the rice soaks up all those drippings and sauce, so nothing goes to waste.

When I want another chicken dinner with a different vibe, I also make this sweet and sticky bourbon chicken recipe. It is a fun option when you are in the mood for something less spicy and more glossy.

What Makes Peri Peri Sauce So Special?

The sauce is special because it hits a bunch of flavors at once. You get **heat**, **acid**, **garlic**, and a little richness from oil. That combo keeps chicken from tasting boring, especially if you are using affordable cuts like thighs or drumsticks.

Also, peri peri sauce is flexible. You can make it super hot, medium, or pretty mild. I like mine in the medium zone so I can still taste the paprika and lemon instead of only feeling the burn.

Another thing I love is how it works for meal prep. The next day, the chicken tastes even better because the flavors settle in. If you have ever tried a creamy casserole like chicken divan recipe, you know how leftovers can be a gift. This is the spicy, zesty version of that same comfort.

How to Make the Peri Peri Sauce From Scratch

You can absolutely buy peri peri sauce, but making it at home is easy and you can control the heat. This is the version I use for my Easy Portuguese Chicken and Rice Recipe.

Ingredients you will need

• 2 to 4 red chili peppers (or 1 to 2 tablespoons crushed chili flakes)
• 4 cloves garlic
• 1 teaspoon **smoked paprika**
• 1 teaspoon dried oregano
• 1 teaspoon salt
• 2 tablespoons lemon juice (or a splash of vinegar)
• 1 tablespoon tomato paste (optional, but adds body)
• 1 third cup olive oil

Quick directions

Blend everything until it looks like a loose red sauce. Taste it carefully. If it is too sharp, add a little more oil. If it is too mild, add more chili. If it is too hot, add more lemon and a pinch of sugar.

Then I split the sauce into two parts: one for marinating raw chicken, and one to spoon on at the end. That way it stays fresh and bright.

Here is the spot where I like to pause and say: you do not need fancy peppers to make this work. Use what you can find. Just do not skip the garlic and lemon because they are what make it taste like real peri peri.

How Hot Is Portuguese Peri Peri Chicken?

It depends on your peppers and how heavy handed you are. Some peri peri chicken is seriously fiery, and some is more of a warm tingle. If you are cooking for a family, start with less chili and let everyone add extra sauce at the table.

If you are not sure, think of it like this: the chicken should taste bold, not painful. You want to keep reaching for another bite.

And if you are serving it with rice, that rice naturally cools things down. That is one reason I keep coming back to this Easy Portuguese Chicken and Rice Recipe when I want spice without regret later.

Tips for the Best Portuguese Chicken

Little choices make a big difference here. These are my tried and true tips from making this more times than I can count.

Use thighs if you can. They stay juicy even if you cook a little longer.

Give it 20 minutes to marinate. Even a short soak in peri peri sauce helps a lot. If you have time, go up to 8 hours in the fridge.

Brown the chicken first. Color equals flavor. You do not need perfect sear marks, just a nice golden surface.

Toast the rice for a minute. Stir it in the pan with the chicken drippings before adding liquid. It adds a subtle nutty taste.

Do not drown the pan. Rice needs the right amount of liquid. Too much and it turns mushy, too little and it stays hard. Use a measuring cup at least the first time.

Variations and Heat Levels

This recipe is easy to tweak, which is great because everyone likes a different level of spice.

For mild: use roasted red peppers plus paprika and skip fresh chili. You still get that red color and smoky flavor.

For medium: use 1 to 2 fresh red chilies and keep the lemon strong.

For hot: add extra chilies and a pinch of cayenne, and finish with a little more sauce on top.

You can also switch the chicken cut. Drumsticks are fun for a casual dinner. Boneless thighs cook faster. If you go with chicken breast, watch it closely and pull it when it is just cooked through so it stays tender.

What to Serve With Portuguese Chicken

Because this is an Easy Portuguese Chicken and Rice Recipe, you already have the main thing handled. But I still like to add one fresh side so the plate feels complete.

• Simple salad with cucumber and tomatoes
• Steamed green beans with lemon
• Roasted broccoli
• Warm crusty bread to mop up extra sauce

And if you want another comforting chicken and carb situation for a different night, this creamy baked chicken tetrazzini recipe is a classic. It is not spicy, but it is the kind of dinner that makes everyone quiet at the table.

Storage and Reheating Tips

Leftovers keep really well, which makes this a solid weekday option.

Store: Put chicken and rice in an airtight container. It will keep in the fridge for up to 3 to 4 days.

Reheat: Add a small splash of water or chicken broth to loosen the rice. Microwave in short bursts, stirring once, or warm it in a pan with a lid on low heat.

Freeze: You can freeze it, but rice can soften a bit after thawing. If you are picky about texture, freeze only the chicken and make fresh rice later.

“I made this for my husband who loves spicy food and for me who does not. I kept the heat medium and served extra sauce on the side. We both loved it, and the rice was the best part.”

Frequently Asked Questions About Portuguese Chicken and Rice

Can I make this Easy Portuguese Chicken and Rice Recipe in one pan?

Yes, that is how I usually do it. Brown the chicken first, toast the rice in the same pan, then add liquid and simmer until the rice is tender.

What rice works best?

Long grain white rice is the easiest and most reliable. If you use brown rice, you will need more liquid and more time. If you use jasmine or basmati, both work great and smell amazing.

Can I bake it instead of simmering on the stove?

Yes. Brown the chicken and toast the rice on the stove, then cover and bake at 375 F until the rice is done, usually 25 to 35 minutes depending on your pan and rice.

How do I stop the rice from sticking?

Use a heavy pot or deep skillet, keep the heat low once it simmers, and do not keep lifting the lid. If it still sticks, add a splash more liquid and give it a gentle stir near the end.

Is peri peri sauce gluten free?

Most homemade versions are, including mine. If you buy it, check the label, especially for thickened sauces or ones with added flavorings.
