How to make baked apple cider donuts, step by step

This is the part where I usually say, do not overthink it. You are basically making a spiced cake batter that bakes in donut form. The only “extra” step is reducing the apple cider, and even that is easy. You just simmer it until it is more concentrated and smells like apple heaven.

Step 1: Reduce the apple cider (quick but important)

Pour your apple cider into a small pot and simmer it until it reduces down. I usually reduce 1 cup to about 1/2 cup. This makes the apple flavor stronger without adding extra liquid. Let it cool for a few minutes so it does not scramble your eggs when you mix.

Step 2: Mix the dry ingredients

In a bowl, whisk together flour, baking powder, a pinch of salt, sugar, and apple pie spice. If you do not have apple pie spice, do not worry, I will help you swap it later.

Step 3: Mix the wet ingredients

In another bowl, mix your melted butter, eggs, a little milk or yogurt, vanilla, and the reduced cider. Then pour wet into dry and stir just until you do not see streaks of flour. The batter should look thick and scoopable, not runny.

Step 4: Fill the donut pan

Grease your donut pan well. I either spoon the batter in or put it in a zip top bag and snip the corner like a piping bag. Fill each donut cavity about 3/4 full so they do not overflow.

Step 5: Bake and coat

Bake until the tops spring back when you lightly tap them. Let them cool a few minutes, then toss in cinnamon sugar or brush with a little butter first so it sticks better.

One more cozy pairing note: if you want another sipper option for guests, this easy apple cider mocktail is the kind of thing that makes people feel like you planned a whole fall moment, even if you did not.

Additions and Substitutions

These donuts are very forgiving, which is one reason I keep coming back to them. You can tweak the spices, swap the topping, or add mix ins depending on what is in your pantry.

Here are my favorite changes that still keep the donuts tasting like Easy Baked Apple Cider Donuts — Fall Spiced (and not like a random muffin pretending to be a donut).

Topping ideas:

Classic cinnamon sugar is my default, but sometimes I do a simple powdered sugar glaze with a pinch of spice. If you want something richer, a maple glaze is really nice too.

Mix ins:

Mini chocolate chips are fun, but chopped walnuts or pecans feel extra fall. You can also add very finely diced apples, but keep it small so the donuts bake evenly.

Dairy swaps:

Milk, buttermilk, or plain yogurt all work. Yogurt makes them a little more tender. If you are dairy free, use a neutral plant milk and a dairy free butter stick.

Flour note:

I usually stick with all purpose flour for the best texture. If you want to use whole wheat, try replacing only part of the flour so the donuts do not get too heavy.

“I made these for my kids after apple picking and they disappeared in ten minutes. The apple flavor actually comes through, and baking them was so much easier than frying.”

Also, random but helpful: if you are in the season where everyone has a scratchy throat from the weather swings, I have seen people swear by these apple cider vinegar tricks for a sore throat. Not a donut tip, but definitely a fall life tip.

Choosing the Right Ingredients: Melted Butter & Apple Pie Spice

Let us talk about two ingredients that seriously shape the final donut: melted butter and apple pie spice. This is where you get that bakery style cozy flavor without needing anything fancy.

Melted butter gives these donuts that rich, warm taste and a soft bite. I like melting it and letting it cool slightly. If it is piping hot, it can mess with the eggs. If you are using salted butter, just go lighter on added salt.

Apple pie spice is basically the shortcut to “tastes like fall.” Most blends include cinnamon, nutmeg, and allspice, and sometimes ginger or cardamom. If you do not have it, you can make a quick version with mostly cinnamon plus a little nutmeg and a pinch of cloves or allspice. Go easy on cloves because it can take over fast.

And do not skip reducing the cider if you can help it. Regular cider adds flavor, yes, but reducing it is what makes the apple taste pop. That is the difference between “nice donut” and “wow, this tastes like the cider mill.”

If you are planning a full fall dinner day, I will mention these easy pork chops with apple cider glaze again because they use similar flavors, and it makes your house smell amazing in the best way.

Overview: How to Make Baked Apple Cider Donuts

If you just want the quick mental checklist before you start, here is the simple flow. This is the part I read to myself when I am juggling kids, laundry, and a craving for something sweet.

Quick overview:

• Simmer apple cider until reduced, then cool it a bit
• Whisk dry ingredients with apple pie spice
• Mix wet ingredients with melted butter and reduced cider
• Combine wet and dry gently
• Fill greased donut pan and bake
• Coat in cinnamon sugar or glaze

My biggest tip is to not overmix. Stir until the flour disappears and stop. Overmixing makes baked donuts tough, and we want soft and tender. Also, grease the donut pan really well. Even nonstick pans can cling when there is sugar involved.

Once you have your timing down, these Easy Baked Apple Cider Donuts — Fall Spiced are a perfect “I need something fun today” recipe. They also travel well if you are bringing a treat to a neighbor or a school event.

Common Questions

Do I need a donut pan?
A donut pan makes them donut shaped, but if you do not have one, you can bake the batter in a mini muffin tin. Same flavor, different shape.

Can I make these ahead of time?
Yes. They are best the day they are baked, but you can make them a day ahead and store them in an airtight container. Rewarm for a few seconds to bring back the cozy texture.

How do I keep the cinnamon sugar topping from getting wet?
Let the donuts cool a bit before coating. If they are too hot, steam can make the sugar melt. You can also do a light butter brush and then a quick toss.

Can I freeze baked apple cider donuts?
Totally. Freeze them without the topping, then thaw and coat fresh. That keeps them from getting sticky.

What kind of apple cider should I use?
Use the kind you like to drink. Fresh pressed cider gives the best flavor, but regular store cider works great too. Just avoid anything labeled cocktail juice.
