Easy Sourdough Discard Waffles — Crispy Tangy is basically my answer to that very specific moment when you open the fridge, see a jar of starter discard, and think, I cannot throw this away again. I used to feel weirdly guilty dumping it, even when I knew it was normal. Then one lazy weekend I tried waffles with discard and, wow, it stuck. These waffles come out crisp on the outside, tender inside, and they have that little tang that makes butter and syrup taste even better. If you like a breakfast that feels special but isn’t fussy, you’re in the right place.
What is Sourdough Discard?
Sourdough discard is the portion of sourdough starter you remove before feeding it. If you’re building or maintaining a starter, you usually take some out so the jar doesn’t grow into a science fair project. That removed portion is the discard.
Here’s the key thing: discard is not “bad.” It’s just starter that hasn’t been freshly fed. It still has flour, water, and wild yeast living in it, plus all those nice fermented flavors. Depending on when you pulled it, it might be mild and creamy, or more sour and bubbly.
When I make Easy Sourdough Discard Waffles — Crispy Tangy, I usually use discard that’s been in the fridge for a few days. It smells pleasantly tangy, kind of like yogurt. If it smells rotten, super off, or you see pink or orange streaks, toss it. Trust your nose and eyes.
One more practical note: discard thickness varies a lot. Some people keep a thick starter, some keep it runny. This recipe is forgiving, but the batter texture should look like a normal waffle batter, pourable but not watery. If yours is too thick, add a splash of milk. If it’s too thin, a spoonful of flour fixes it.
Benefits of Using Sourdough Discard in Recipes
The first benefit is obvious: less waste. But honestly, once you taste what discard does to waffles, you’ll start keeping discard on purpose because it’s that good.
Here’s what sourdough discard brings to the table:
1. Flavor
That gentle tang makes sweet toppings pop and keeps the waffles from tasting flat.
2. Texture
Discard helps with a crisp exterior and a soft inside, especially if you don’t overmix the batter.
3. Convenience
Discard recipes are a great “use what you have” move. You don’t need a special plan, just a jar of discard and pantry basics.
4. A little extra nutrition
Fermented batter can be easier to digest for some people. It’s not magic, but many folks find sourdough foods sit nicely.

“I used my discard that was 5 days old and the waffles turned out so crispy I didn’t even need to toast leftovers. The tang was perfect with maple syrup.”
Tips for the Perfect Belgian Waffles
I make these in a Belgian waffle maker because I love the deeper pockets, but a regular waffle iron works too. This is the part where small habits make a big difference.
My go to ingredient list
This is my everyday version. It’s simple, forgiving, and doesn’t require anything fancy.
- Sourdough discard (room temp is easiest to mix, but cold is fine)
- Flour (all purpose works great)
- Milk or buttermilk (buttermilk makes it extra tangy)
- Eggs
- Melted butter or neutral oil
- Sugar (just a little)
- Baking soda and a pinch of salt
- Vanilla (optional, but I always add it)
Simple directions that actually work
I’m going to talk like I’m standing in your kitchen with you:
Step 1: Preheat your waffle maker. Like, really preheat it. A hot iron is how you get that crisp shell.
Step 2: Mix your wet ingredients first, then stir in discard. Add dry ingredients and mix until just combined. A few lumps are fine. Overmixing makes waffles tough.
Step 3: Let the batter sit 5 to 10 minutes if you can. It thickens a bit and bakes up nicer.
Step 4: Grease the iron lightly even if it’s nonstick. Then cook until the steam slows down. I know it’s tempting to peek early, but waiting helps crisp them up.
Step 5: Put finished waffles on a wire rack, not a plate. Plates trap steam and make them soft. A wire rack keeps them crunchy.
That last tip is the difference between “pretty good” and “why are these so crispy?” Easy Sourdough Discard Waffles — Crispy Tangy really shines when you let the outside stay dry and hot.
If you want a fun savory side with your waffle brunch, these easy air fryer fried pickles are weirdly perfect. Salty, crunchy, a little tangy. It’s snacky brunch heaven.
Alternative Recipes for Sourdough Discard
Once you get hooked on keeping discard around, you’ll want more ways to use it besides waffles. I rotate through a few staples depending on the week.
Here are some easy ideas:
Pancakes: Softer and quicker than waffles, great for weekday mornings.
Crackers: Awesome when you have a lot of discard and want something crunchy for dips.
Quick breads and muffins: Adds a gentle tang and keeps things moist.
Pizza dough: Even a small amount of discard can bring flavor to the crust.
And if you’re doing a full breakfast spread, a simple veggie side can make it feel more like a meal. I make these easy air fryer green beans when I want something crisp and garlicky next to a sweet plate. It sounds random, but it works.
Serving Suggestions and Variations
This is the fun part because these waffles go sweet or savory without any drama. Easy Sourdough Discard Waffles — Crispy Tangy has enough flavor on its own that you don’t need much, but toppings are half the joy.
- Classic: butter and real maple syrup
- Bright: lemon zest in the batter, then powdered sugar on top
- Fruity: berries plus a spoon of yogurt
- Cozy: cinnamon in the batter, sliced bananas, and toasted nuts
- Savory: skip vanilla, reduce sugar, add shredded cheddar and chopped chives
Variations I’ve tried and liked:
Extra crisp: use a little cornstarch in place of a small amount of flour, and don’t stack the waffles.
More tang: use buttermilk and discard that’s been in the fridge a bit longer.
Freeze for later: cool completely, freeze in a single layer, then bag them up. Reheat in a toaster or oven until hot and crisp.
One more reminder for your brunch menu planning: those easy protein waffles can be a nice second option if someone wants a higher protein plate, and I also keep these easy air fryer green beans in my back pocket when I need a quick side that makes the table look more “put together” than it really was.
Common Questions
Can I use discard straight from the fridge?
Yep. Cold discard mixes fine. You might need an extra minute of resting time so the batter thickens evenly.
Why aren’t my waffles crispy?
Usually it’s one of these: the iron wasn’t fully hot, the waffles were pulled too early, or they were set on a plate and steamed. Use a wire rack and cook until the steam slows down.
Can I make the batter the night before?
You can, but add baking soda right before cooking. If it sits too long with the baking soda, you lose the lift.
What if my discard is very sour?
That’s totally fine if you like tang. If it’s too much, use a little more sugar or add vanilla. You can also mix in some fresh flour and milk to mellow it out.
Can I make these dairy free?
Yes. Use plant milk and oil or melted coconut oil instead of butter. The waffles still brown nicely.
