soft chewy cookies

Easy Christmas Snickerdoodle Recipe — Soft Cinnamon has saved me more than once when I needed a cozy, crowd pleasing cookie fast. You know those days when you suddenly remember the cookie exchange is tomorrow, or guests are popping by and your house smells like nothing? This is the fix. These cookies come out soft in the middle, lightly crisp at the edges, and they make your kitchen smell like warm cinnamon happiness. I’ve made them for neighbors, school events, and late night movie snacks, and the plate never lasts long. Let’s get you baking without stress.

Soft and Chewy Snickerdoodle Cookies

If your goal is a cookie that feels like a little pillow when you bite in, this is it. The trick is simple: don’t overbake them. Snickerdoodles should look slightly underdone in the center when you pull the tray out. They finish setting as they cool, and that’s what keeps the texture soft instead of dry.

For this Easy Christmas Snickerdoodle Recipe — Soft Cinnamon vibe, I go a little heavier on the cinnamon sugar coating because it screams holiday without needing frosting or sprinkles. Plus, it looks pretty and snowy in that rustic, homemade way.

If you want a deeper dive into the classic chewy texture, I’ve also leaned on this page before and it’s a solid reference for the basics: easy snickerdoodle cookies with soft chewy cinnamon.

Here are my best “keep them soft” tips that actually work in a normal home kitchen:

• Use room temperature butter so the dough mixes evenly and doesn’t get greasy.
• Don’t overmix once you add flour. Stop when it’s just combined.
• Pull them early when the edges look set but the centers still look a bit puffy.
• Store with a slice of bread in the container if you want them softer for days.

And if you’re building a holiday cookie tray, these pair so well with buttery, crisp cookies like these: buttery Christmas spritz cookies recipe. Soft plus crisp together is a winning combo.

What are Snickerdoodles?

Snickerdoodles are classic sugar cookies that get rolled in cinnamon sugar before baking. That’s the signature look and flavor, and it’s why they feel instantly comforting. They’re not fancy, but they don’t need to be. They’re the kind of cookie you can bring anywhere and people just smile.

The inside is tender and slightly tangy, the outside has that sweet cinnamon sparkle, and the whole thing feels a little nostalgic. When I was younger, I thought snickerdoodles were just sugar cookies with cinnamon, but there’s a little more going on than that.

They’re also perfect if you want a cookie that travels well. No frosting to smear, no chocolate to melt. Just stack them up and go. If you need a fun dessert that’s more of a layered party thing (and also travels well), you might like this too: easy Christmas cookie lasagna recipe.

One of my friends texted me after I dropped off a tin last December, and I saved it because it made me laugh.

“These snickerdoodles taste like Christmas morning. I ate three standing over the sink so no one would see me.”

Honestly, relatable.

Why is cream of tartar in Snickerdoodles?

Cream of tartar is the little “secret” that makes snickerdoodles taste like snickerdoodles. It adds a gentle tangy flavor that balances the sweetness, and it also helps with the texture. When it reacts with baking soda, it gives the cookies that classic lift and soft bite.

If you’ve ever made cinnamon sugar cookies without it and thought, “Yum, but it’s not quite right,” that’s usually what’s missing. It’s not a weird ingredient either. You can find it in the spice aisle, and it lasts a long time in your pantry.

Can you substitute it? Sort of. If you’re in a pinch, you can use baking powder instead of the baking soda plus cream of tartar combo, but the flavor won’t be as traditional. I’m not saying it’ll be bad. It’ll still be a cinnamon sugar cookie. It just won’t have that classic snickerdoodle tang.

By the way, if you’re doing a big holiday baking day, it’s smart to mix in something crunchy and sweet for variety. This one is dangerously snackable: Christmas cornflake brittle recipe.

How to make the Best Snickerdoodle Cookie Recipe

Here’s how I make my Easy Christmas Snickerdoodle Recipe — Soft Cinnamon at home. Nothing complicated, no special equipment, just the good stuff. I’m including practical details because I hate when recipes skip the little things that actually matter, like how the dough should feel.

Ingredients you will need

• 1 cup unsalted butter, softened
• 1 1/2 cups granulated sugar
• 2 large eggs
• 2 3/4 cups all purpose flour
• 2 tsp cream of tartar
• 1 tsp baking soda
• 1/2 tsp salt

Cinnamon sugar coating

• 1/3 cup granulated sugar
• 1 1/2 tbsp ground cinnamon (add a little more if you love spice)

Directions

• Preheat your oven to 350 F and line two baking sheets with parchment paper.
• Cream the butter and sugar until it looks fluffy and lighter in color, about 2 minutes.
• Mix in the eggs until smooth.
• In a separate bowl, whisk flour, cream of tartar, baking soda, and salt. Add to the wet mixture and stir just until you don’t see dry flour.
• Mix cinnamon and sugar in a small bowl for the coating.
• Scoop dough into balls (about 1 1/2 tbsp each), roll in cinnamon sugar, and place on the baking sheet with space between.

Little optional holiday extras if you want them to feel more festive:

• Add a tiny pinch of nutmeg to the cinnamon sugar.
• Press a few white chocolate chips into the top right after baking.
• Swap 2 tbsp of sugar in the coating for coarse sparkling sugar for extra crunch.

Do I need to chill Snickerdoodle cookie dough?

Most of the time, no. This Easy Christmas Snickerdoodle Recipe — Soft Cinnamon is designed to be easy, and the dough bakes up well without chilling.

That said, chilling can help if your kitchen is warm or your butter got too soft. If your dough feels sticky and hard to roll, pop it in the fridge for 20 to 30 minutes. You’ll get slightly thicker cookies with a bit less spread.

My real life rule is this: if it’s behaving, bake it. If it’s messy, chill it. No need to overthink it.

Common Questions

Can I make these ahead for a cookie exchange?

Yes. Bake them a day or two ahead and store in an airtight container. They stay soft if you don’t overbake, and you can add a slice of bread to keep them extra tender.

How do I know when they’re done?

Look for set edges and a center that still looks a little puffy. They should not look fully firm in the middle when you pull them out.

Can I freeze snickerdoodle dough?

Totally. Roll the dough into balls first, freeze on a tray, then store in a freezer bag. Roll in cinnamon sugar right before baking. Add 1 to 2 minutes bake time.

What if I don’t have cream of tartar?

You can replace the cream of tartar and baking soda with baking powder (about 2 tsp), but the flavor will be less classic and a bit less tangy.

Why did my cookies turn out flat?

Usually it’s butter that was too warm or dough that sat out. Chill the dough 20 to 30 minutes next time, and make sure your baking sheets are cool before adding the next batch.
