Easy Sourdough Discard Crackers — Crispy Snack has become my go to solution for that very specific problem: you have sourdough discard in the fridge, you do not want another loaf project, and you really just want something crunchy right now. I used to toss discard because I felt guilty keeping jars of it around. Then I started making crackers and it honestly changed my snack life. They’re quick, they’re flexible, and they make the kitchen smell like warm toast. If you’ve ever stared at your starter and thought, what am I even doing with this, you’re in the right place.

Why You’ll Love Sourdough Crackers

I love recipes that feel like a little win, and sourdough discard crackers totally fit that vibe. You’re using something that might have gone to waste, and you end up with a bowl of crisp bites that feel kind of fancy, even if you’re wearing pajama pants.

Here’s why I keep making them:

• Zero waste for your sourdough discard, which always feels good.
• That tangy flavor you cannot fake, especially if your discard is a few days old.
• Cheaper than store bought crackers, and you control the salt and seasonings.
• They’re sturdy enough for dips, not those flimsy crackers that snap instantly.

Also, if you’re a crunchy snack person, you’ll probably like other snacky recipes too. These easy ranch oyster crackers are another dangerously snackable option for game nights or just standing by the counter “testing” them.

“I made these with everything bagel seasoning and my kids ate the whole tray before dinner. I’m not even mad.”

Important Ingredients

The ingredient list is short, which is part of the charm. When I’m making sourdough discard crackers, I’m usually trying to keep things simple and not dirty every bowl I own.

The basics you really need

• Sourdough discard: Unfed discard works great. Thick or thin both work, you’ll just spread accordingly.
• Butter or olive oil: Butter gives a richer flavor. Olive oil makes them feel a bit more savory and snack board ready.
• Salt: Do not skip it. Even a little makes the flavor pop.

From there, you can build flavor. I usually add one of these:

• Garlic powder
• Onion powder
• Dried rosemary or thyme
• Everything bagel seasoning
• Grated parmesan

Quick note on discard: if it smells sharply sour but not rotten, you’re fine. If you see pink or orange streaks, or it smells truly awful, toss it. Trust your nose and eyes.

When I’m planning snacks, I also like to add a crunchy side that feels fresh. These easy air fryer green beans are oddly addictive and pair well with a dip and crackers situation.

How to Make Sourdough Crackers

This is the part where you realize how little effort it takes. The main trick is spreading the batter thin enough and baking it long enough. That’s it. You don’t need a stand mixer, and you don’t need to be precious about it.

Step by step directions

• Preheat your oven to 325 F. Line a baking sheet with parchment paper.
• In a bowl, mix 1 cup sourdough discard with 2 tablespoons melted butter (or olive oil) and 1/2 teaspoon salt.
• Add seasonings if you want. I do 1/2 teaspoon garlic powder a lot.
• Pour the mixture onto the parchment and spread it very thin with a spatula. Thin matters more than perfect.
• Bake for about 10 to 15 minutes, then pull the pan out and lightly score the sheet into cracker shapes with a knife or pizza cutter.
• Put it back in the oven and bake another 15 to 25 minutes, depending on thickness, until it looks dry and lightly golden.
• Cool completely, then snap into pieces along the lines.

If you’re snacking like I do, you’ll want something fun on the side. I’m obsessed with these easy air fryer fried pickles when I’m in a salty mood. Pickles plus tangy crackers is a wild combo, in a good way.

Storage tip: keep your crackers in a jar or airtight container on the counter. If they soften after a day or two (it happens), toss them back in a 300 F oven for 5 minutes to re crisp.

Substitutions & Variations

The best part about sourdough discard crackers is that they forgive your experimenting. I’ve made batches that were paper thin and others that were more rustic and chunky. Both got eaten.

Here are easy swaps that work:

• Dairy free: Use olive oil instead of butter.
• Extra savory: Add 2 tablespoons grated parmesan, plus black pepper.
• Seeded crunch: Sprinkle sesame seeds or poppy seeds over the top before baking.
• Spicy: Add a pinch of cayenne or smoked paprika.
• Sweet leaning: A tiny sprinkle of cinnamon sugar after baking is surprisingly good, especially if you keep the salt light.

If you’re doing a party snack spread, a bowl of crackers plus something like ranch oyster crackers gives you two totally different crunchy options without much extra work.

How to Ensure Crisp Crackers

Crisp is the whole point, right? If you’ve tried sourdough discard crackers before and they turned out bendy, do not worry. It’s usually an easy fix.

My no stress crisp rules

• Spread thinner than you think. If it looks too thin, it’s probably perfect.
• Use parchment. It helps the batter spread evenly and peel off cleanly.
• Score mid bake. Scoring early can make the lines disappear as it bakes.
• Let them bake until dry. If the middle still looks glossy, keep going.
• Cool fully. They crisp up more as they cool, like magic.

If your edges brown before the center is crisp, pull off the edge pieces and keep baking the center for a few more minutes. I’ve done that plenty of times, especially when my batter wasn’t perfectly even.

And if you like crispy sides in general, you should try these crispy garlic air fryer green beans sometime. They hit that same crunchy craving when you want something a little less snacky and more dinner friendly.

Common Questions

1) Can I use fed starter instead of discard?
Yes. It works, but the flavor will be milder and sometimes it puffs a bit more. Discard gives that stronger tang most people love.

2) Why are my crackers chewy?
They were either too thick or not baked long enough. Spread thinner next time, and bake until the surface looks dry all the way through. Also cool completely before judging.

3) Do I need to flip them?
Usually no. If your oven runs cool or your crackers are thicker, you can break them apart near the end and return pieces to the oven for a few minutes to dry out.

4) How long do they last?
About 4 to 7 days in an airtight container, depending on humidity. If they soften, re crisp in the oven for a few minutes.

5) What dips go best with them?
Hummus, ranch, spinach dip, and any cheesy dip are great. They’re sturdy enough to scoop without falling apart.

A little snack win you’ll make again

If you’ve got discard sitting around, sourdough discard crackers are one of the easiest ways to turn it into something you actually get excited to eat. Keep them thin, bake them until dry, and do not be shy with seasoning.
