sheet pan pancakes

Easy Sheet Pan Pancakes Recipe mornings are basically my survival story. You know those days when everyone is hungry at the same time, the coffee is still brewing, and flipping pancakes one by one feels like a personal attack? That is exactly why I started baking pancakes in the oven. You get one big fluffy pancake slab, everyone eats together, and you are not stuck at the stove. Plus, you can do different flavors in the same pan, which makes picky eaters way less dramatic.

How to Make Sheet Pan Pancakes

This is my go to method when I want pancakes but also want my life to be easier. The batter is simple, the pan does most of the work, and the oven gives you an even cook with minimal babysitting. If you have ever tried to keep pancakes warm while you cook the next batch, this will feel like a little kitchen miracle.

What you will need

• Sheet pan (about 13×18 inches is perfect)
• Parchment paper (or a good greasing job)
• Mixing bowl and whisk
• Measuring cups and spoons

Ingredients

• 2 cups all purpose flour
• 2 tablespoons sugar
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 2 large eggs
• 1 3/4 cups milk (any kind)
• 1/4 cup melted butter (or neutral oil)
• 2 teaspoons vanilla extract

Optional add ins: chocolate chips, blueberries, sliced banana, sprinkles, cinnamon, chopped nuts, or a handful of granola for crunch.

Directions

• Preheat your oven to 425 F.
• Line a sheet pan with parchment paper. If you skip parchment, grease the pan really well, especially the corners.
• In a big bowl, whisk flour, sugar, baking powder, and salt.
• In another bowl, whisk eggs, milk, melted butter, and vanilla.
• Pour wet into dry and stir until combined. A few small lumps are totally fine. Overmixing is what makes pancakes sad.
• Pour batter into the sheet pan and gently spread it out.
• Add toppings in sections if you want different flavors for different people.
• Bake 12 to 15 minutes until the top looks set and lightly golden. If you like a little more color, broil for 30 to 60 seconds, but watch it closely.
• Cool 2 minutes, slice into squares, and serve.

That is the whole Easy Sheet Pan Pancakes Recipe flow. It is very forgiving, which is exactly what I need before I have had enough coffee.

“I made this on a Sunday when my kids had friends over, and it saved me. Everyone ate at the same time, no waiting for batches, and the sheet pan was gone in minutes.”

Recipe Variations

One of my favorite things about an Easy Sheet Pan Pancakes Recipe is how customizable it is. You can keep the base batter the same and switch up flavors depending on what you have in the kitchen. It feels like you made a fancy breakfast spread, but you really just used one pan.

Here are a few combos that always work:

Blueberry lemon: Add blueberries plus a little lemon zest in one section. Serve with powdered sugar.

Chocolate chip: Sprinkle chips on top right before baking. Mini chips spread out nicely.

Cinnamon roll vibe: Mix 2 tablespoons melted butter with 2 tablespoons brown sugar and 1 teaspoon cinnamon, then drizzle it over the batter in ribbons and lightly swirl with a knife.

Peanut butter banana: Add banana slices on top and drizzle with warmed peanut butter after baking.

Protein friendly: Swap in some Greek yogurt for part of the milk, or serve with a high protein topping like cottage cheese.

If protein is your thing, I have been into these easy cottage cheese pancakes lately too. Different texture than sheet pan style, but super filling and great when you need breakfast to actually hold you over.

Pancake Topping Ideas

Toppings are where you can make this feel fun without making it complicated. My rule is simple: pick one syrupy thing, one fruity thing, and one crunchy thing. Then people can build their own little breakfast situation.

Some topping ideas I actually use (not just pretend I use):

Classic: butter and maple syrup, always.

Fruit: berries, sliced strawberries, bananas, or quick warm apples (just microwave chopped apples with cinnamon for a minute).

Crunch: toasted nuts, granola, crushed pretzels, or coconut flakes.

Creamy: peanut butter, almond butter, whipped cream, or vanilla yogurt.

Dessert mode: chocolate sauce, caramel, cookie crumbs, or sprinkles for the kids (or for you, no judgment).

If you want something extra fluffy for a weekend treat, these Japanese fluffy pancakes are a whole experience. Not sheet pan, totally different vibe, but so fun when you want that tall cloud look.

How To Store & Freeze

I love this recipe because it is just as good the next day. That makes it perfect for busy weeks when you want breakfast ready fast.

To store: Let the pancakes cool completely, then put slices in an airtight container in the fridge for up to 4 days.

To freeze: Slice into squares, lay them on a baking sheet to freeze for 30 to 60 minutes so they do not stick together, then move to a freezer bag. They keep well for about 2 months.

To reheat:

Microwave: 20 to 40 seconds for one square.

Toaster: works great for firmer edges, especially if you like a tiny bit of crisp.

Oven: 350 F for 8 to 10 minutes if you are heating a bunch.

This is also where the Easy Sheet Pan Pancakes Recipe really shines for meal prep. You bake once and you have breakfast handled for days.

Troubleshooting

If your pancakes do not come out perfect the first time, do not stress. This is the stuff I learned the hard way, usually while someone was hovering in my kitchen asking when breakfast would be ready.

My pancakes turned out dry.
This usually means they baked a little too long or your oven runs hot. Check at 12 minutes, and pull them when the center is set. Also measure flour by spooning into the cup, not scooping straight from the bag.

The middle is undercooked.
Your batter might be too thick, or the pan might be smaller than expected, making the pancake too deep. Add a splash more milk next time, and make sure you are using a standard sheet pan size.

They stuck to the pan.
Parchment paper is your best friend here. If you skip it, grease the pan really well and get into the corners.

They tasted bland.
Do not forget the salt and vanilla. Also, toppings help, but the base needs a little flavor support.

Toppings sank.
For heavy add ins like big chocolate chunks or lots of fruit, sprinkle them on top right before baking instead of mixing into the batter.

Common Questions

Can I make this with buttermilk?
Yes. Swap the milk for buttermilk. It will taste a little tangier and feel extra tender.

Do I have to use a 425 F oven?
That temperature helps the pancake puff and cook evenly. If your oven runs hot, you can do 400 F and bake a minute or two longer.

How do I make it dairy free?
Use plant based milk and swap melted butter for oil. Toppings like fruit and maple syrup keep it delicious.

Can I double the recipe?
Yes, but you will want to use two sheet pans. A super thick layer in one pan tends to bake unevenly.

Is this good for a brunch crowd?
Honestly, yes. That is one of the best times to use an Easy Sheet Pan Pancakes Recipe because you can bake multiple pans and keep everything warm in the oven.
