Ropa Vieja

Easy Ropa Vieja Cuban Shredded Beef is one of those dinners I make when I want something cozy and impressive, but I also do not want to hover over the stove all night. You know those days when you are tired, everyone is hungry, and takeout is calling your name? This recipe saves me every time because the beef basically cooks itself and your kitchen smells amazing. It is saucy, a little sweet from peppers and onions, and it turns into that perfect shreddable texture. If you have only had shredded beef in tacos, this will feel like a fun little change of pace.

Best Cut of Beef for Ropa Vieja

If you want ropa vieja that shreds easily and stays juicy, the cut of beef matters. Traditionally, people use flank steak. I love flank steak for this because it shreds into long strands and feels really classic. But it is not the only option, and honestly I grab what fits my budget that week.

My go to picks at the grocery store

• Flank steak: the classic choice, shreds beautifully, cooks best low and slow.
• Chuck roast: a little fattier, super forgiving, very tender and flavorful.
• Brisket: amazing if you find it on sale, rich and bold, but can be pricier.
• Bottom round: leaner, still works, just do not rush it.

One quick tip from my own trial and error: if your cut is lean, be generous with the cooking liquid and do not overcook it after it is shredded. You want it soaked in the sauce, not dried out.

Also, if you are in a shredded beef mood in general, you might like this easy barbacoa beef in the slow cooker. Different flavor direction, but the same kind of hands off comfort.

How to Make Ropa Vieja in the Slow Cooker

This is the method I use the most because it is hard to mess up. It is perfect for a busy day because you can toss everything in, walk away, and come back to tender beef and a rich sauce.

Here is the simple game plan. You can adjust amounts a bit and it will still work, so do not stress.

What you will need

• 2 to 3 pounds beef (flank steak or chuck roast are my favorites)
• 1 onion, sliced
• 1 bell pepper, sliced (I like using red for sweetness)
• 3 to 4 garlic cloves, minced
• 1 can crushed tomatoes or tomato sauce
• 2 tablespoons tomato paste (optional but makes it richer)
• 1 teaspoon ground cumin
• 1 teaspoon dried oregano
• 1 to 2 bay leaves
• 2 tablespoons vinegar (white or apple cider both work)
• 1 cup beef broth
• Salt and pepper
• Optional: olives or capers if you like that salty pop

Directions in plain language:

Layer the onion and bell pepper in the slow cooker first. Put the beef on top. Sprinkle on salt, pepper, cumin, oregano, and the bay leaves. Add garlic, tomatoes, tomato paste if using, vinegar, and broth. Cover and cook on low for 8 hours or high for about 4 to 5 hours, until you can shred it easily with a fork.

Once it is tender, pull the beef out, shred it, then stir it back into the sauce. Let it sit in the slow cooker for another 15 to 20 minutes if you can. That extra time helps the beef soak up the flavor.

If you want a quick side dish idea that feels super homey, I sometimes make something like this ground beef and potatoes casserole on a different night and use the leftovers for lunches. Not traditional for ropa vieja, but it is that same comforting vibe.

I made this on Sunday and my whole family kept sneaking bites straight from the slow cooker. The beef shredded so easily and the sauce tasted like it had been cooking all day, because it was. This is going into our regular rotation.

How to Make Ropa Vieja in an Instant Pot

If you forgot to plan ahead, this is your backup plan that still tastes like you did. Instant Pot ropa vieja is great for weeknights when you want that slow cooked flavor in a lot less time.

Here is how I do it: use the saute function to soften the onions and peppers for a few minutes with a pinch of salt. Add garlic for about 30 seconds so it does not burn. Then add the beef, tomatoes, broth, vinegar, spices, and bay leaves.

Cook on high pressure for about 55 to 70 minutes depending on the cut and thickness. Flank steak usually needs less time than chuck roast. Let it naturally release pressure for 10 to 15 minutes, then quick release the rest.

Shred the beef, stir it back into the sauce, and if the sauce looks too thin, use saute for a few minutes to thicken it up. Do not walk away while it reduces. It goes from perfect to too thick faster than you would think.

What to Do With Ropa Vieja Leftovers

Leftovers are honestly one of the best parts. The flavor gets even better after it sits overnight, and it makes meal prep feel like cheating.

Here are a few ways I use it up:

• Rice bowls: white rice, black beans, ropa vieja, and a squeeze of lime.
• Sandwiches: pile it on rolls with a little melted cheese.
• Stuffed peppers: mix with rice, fill peppers, bake until warm.
• Breakfast: throw it in a skillet and top with a fried egg.
• Pasta night: spoon the saucy beef over noodles when you want a break from red sauce.

Storage tips that have worked for me: keep it in an airtight container in the fridge for up to 4 days. For freezing, portion it with plenty of sauce so it stays moist. It freezes well for about 2 to 3 months.

What is Ropa Vieja

Ropa vieja is a classic Cuban dish made with shredded beef simmered in a tomato based sauce with onions, bell peppers, garlic, and warm spices like cumin and oregano. The name translates to old clothes, which sounds funny, but it is basically describing the look of the shredded beef once it is pulled apart.

What I love about it is how balanced it is. It is hearty but not heavy, and the sauce has that tangy little pop from vinegar that keeps everything from tasting flat. Some people add olives for a briny kick, and I do that when I have them.

My favorite way to serve it is with rice, black beans, and maybe some sweet plantains if I am feeling extra. But you can keep it super simple too. A bowl of this with rice is the kind of dinner that makes the whole day feel better.

If you like Cuban flavors, you should also try easy beef picadillo. It has that same cozy spice profile but comes together faster since it uses ground beef.

Common Questions

Do I have to sear the beef first?

Nope. It adds flavor, but it is optional. On busy days I skip it and it is still delicious.

Is flank steak too tough for this?

Not if you cook it long enough. Flank steak turns tender when it has time to break down, and it shreds nicely.

Can I make ropa vieja less tangy?

Yes. Start with 1 tablespoon vinegar instead of 2, then taste at the end. You can always add more, but you cannot take it out.

What if my sauce is watery?

Shred the beef and simmer the sauce uncovered for a few minutes. In the slow cooker, you can crack the lid and let it cook a bit longer. In the Instant Pot, use saute to reduce.

What should I serve with it?

Rice and beans are the classic. I also love it with warm tortillas, fried plantains, or a simple salad if you want something fresh on the side.
