Poppy Seed Dressing

Easy Strawberry Spinach Salad — Poppy Seed is my go to move for those days when you want something fresh but you do not want to cook a whole “thing.” You know the vibe, it is warm outside, you have about ten minutes of energy, and you still want your meal to feel a little special. This salad hits that sweet spot with juicy strawberries, crisp spinach, and that lightly sweet poppy seed dressing that makes everything taste brighter. It is also one of those recipes that looks fancy on the table, even though it is almost laughably easy. If you have a bag of spinach and a carton of berries, you are already halfway there.

Why You’ll Love It

This is the kind of salad that gets people to actually eat the salad. The strawberries make it feel fun, the dressing tastes like something you would pay extra for at a cafe, and the textures keep every bite interesting.

Here is why I keep coming back to Easy Strawberry Spinach Salad — Poppy Seed:

It is fast. Like, weeknight fast. You can toss it together while something else is in the oven or while the grill is heating up.

It works for real life. Lunch at home, potluck, baby shower, random Tuesday, it fits all of it.

It has that sweet and tangy balance. The poppy seed dressing pulls the strawberries and spinach together in a way that just makes sense.

Key Ingredients in Strawberry Spinach Salad

You do not need a long grocery list. I like keeping this simple and letting the strawberries do their thing. The ingredient quality matters though, especially with fresh fruit. If your berries are sweet, your whole salad gets better.

The basics I always use

• Fresh baby spinach: tender, mild, and the perfect base.
• Strawberries: sliced, ripe, and sweet.
• Red onion: just a little for bite. If you are onion shy, slice it thin.
• Crumbled feta or goat cheese: creamy and tangy. Optional but highly recommended.
• Crunch: sliced almonds, pecans, or walnuts.

Now let us talk dressing, because that is where the “poppy seed” part shines. I usually do a quick homemade poppy seed dressing with pantry stuff. You will need:

• Olive oil
• Apple cider vinegar or white wine vinegar
• Honey or sugar
• Dijon mustard
• Poppy seeds
• Salt and pepper

How to Make Strawberry Spinach Salad

I make this salad in two little steps: mix the dressing, then build the salad. If you do it in that order, you can taste the dressing and adjust it before it hits the greens.

Step by step, no stress

1. Make the dressing. In a small bowl or jar, whisk (or shake) together olive oil, vinegar, honey, Dijon, poppy seeds, and a pinch of salt and pepper. Taste it. If it is too tangy, add a tiny bit more honey. If it is too sweet, add a splash more vinegar.

2. Prep the salad base. Add spinach to a big bowl. Top with sliced strawberries and a few thin slices of red onion.

3. Add your toppings. Sprinkle on your nuts and cheese. If you are using almonds, I love them lightly toasted, but it is not required.

4. Dress it right before serving. This matters. Spinach wilts fast once it is dressed. Drizzle, toss gently, and serve immediately.

“I brought this to a family cookout and everyone asked for the dressing recipe. Even my picky nephew ate seconds, which honestly never happens.”

Helpful Tips

I have made Easy Strawberry Spinach Salad — Poppy Seed enough times to learn a few things the hard way. Here is what actually helps.

Keep the spinach dry. If you rinse it, make sure it is really dry before building the salad. Wet spinach makes the dressing slide right off and the salad gets watery.

Slice strawberries right before serving. They can get soft and juicy if they sit too long, especially once sugar or dressing touches them.

Soak the onions if you want them milder. Ten minutes in cold water takes the edge off. Drain well and pat dry.

Dress the salad at the last second. If you are taking it somewhere, bring the dressing in a jar and toss when you arrive.

Do a quick taste check. Strawberries vary a lot. If your berries are not super sweet, you might like a touch more honey in the dressing.

What to Serve with Strawberry Spinach Salad

This salad is light, so it pairs really well with simple proteins and warm weather meals. I also love it on brunch tables because it breaks up all the heavy stuff.

My favorite pairings

• Grilled chicken with a little salt, pepper, and garlic.
• Salmon, especially if it has a citrusy glaze.
• Turkey or ham sandwiches for an easy lunch situation.
• Quiche or egg bites for brunch.
• Pasta salad if you are feeding a crowd and want multiple sides.

If I am serving it at a get together, I will often double the recipe. Easy Strawberry Spinach Salad — Poppy Seed disappears fast, especially when it is hot out and everyone wants something refreshing.

Common Questions

Can I make this salad ahead of time?
Yes, but keep everything separate. Prep the spinach, slice the strawberries, and store the dressing in a jar. Toss right before serving.

What is the best cheese for this?
Feta is salty and easy. Goat cheese is creamy and feels a little fancy. Blue cheese is bold if you like stronger flavor.

Can I use a different green instead of spinach?
Totally. Spring mix works well. Arugula is peppery and great if you want more bite, but it changes the vibe.

How do I keep the nuts crunchy?
Add them at the very end, right before serving. If you are storing leftovers, keep extra nuts on the side.

Is poppy seed dressing supposed to be sweet?
Usually yes, a little. The sweetness balances the vinegar and makes it work with fruit. You can reduce the honey if you prefer it more tangy.
