Pho Recipe

Easy Pho Recipe — Vietnamese Pho Soup is what I make when I want something cozy but I do not want to babysit a pot all day. Maybe you have had pho at a restaurant and thought, no way I can do that at home. I used to think the same thing, and honestly I just wanted a shortcut that still tastes like real comfort food. This version is friendly for a weeknight, but it still gives you that warm spiced broth and slurpy noodle moment. If you have been stuck in a soup rut, this is your sign to switch it up tonight.

Authentic Pho vs. Quick Pho

Let us get this out of the way. Traditional pho is a slow love letter of a broth, often simmered for hours with bones, charred onion, and spices until it turns deep and rich. It is amazing, and if you have time, you should try it at least once.

But quick pho is for real life. It is for when you want a big bowl of Vietnamese comfort without planning your whole day around it. My goal with this Easy Pho Recipe — Vietnamese Pho Soup is to keep the flavor cues that matter most, like toasty spices, salty savory broth, and fresh toppings, while using smart shortcuts.

Here is what changes in the quick version:

Instead of simmering bones forever, we lean on good store broth plus a short simmer with aromatics and spices. Instead of complicated prep, we do simple steps that still make your kitchen smell incredible. And instead of stressing about being perfect, we focus on making it tasty.

How To Make Beef Pho

This is the part where I tell you exactly how I do it at home. You do not need fancy tools. You just need a pot, a strainer, and a little patience while the broth gets friendly with the spices.

What you will need

• Broth: 8 cups beef broth (low sodium is easier to control)
• 1 onion, halved
• 3 to 4 inches fresh ginger, sliced in half lengthwise
• Spices: 2 star anise, 1 cinnamon stick, 4 cloves, 1 teaspoon coriander seeds
• 2 tablespoons fish sauce (add more to taste)
• 1 to 2 teaspoons sugar (yes, it matters)
• Rice noodles (pho noodles)
• Beef: thin sliced steak (more on cuts below)
• Salt to taste

Directions that actually feel doable

1) Char the onion and ginger. I do this right over a gas flame when I can, but a dry skillet works too. Just press the cut sides down until you get some blackened spots and it smells sweet and smoky.

2) Toast the spices. Toss the star anise, cinnamon, cloves, and coriander into the dry pot for about a minute. When you smell them, you are done.

3) Build the broth. Pour in the beef broth, then add the charred onion and ginger. Bring it up to a gentle simmer.

4) Simmer and taste. Let it simmer 25 to 35 minutes. Then stir in fish sauce and sugar. Taste and adjust. This is where you make it yours. If it tastes flat, it usually needs a little salt or fish sauce. If it tastes too sharp, a tiny bit more sugar balances it.

5) Strain. Pull out the big pieces and strain if you want it extra clean. I do not always strain on weeknights, but it is worth it if you are serving guests.

6) Cook noodles. Follow the package. Rinse briefly so they do not glue together.

7) Add beef. Put thin sliced raw beef in the bowl, then ladle the steaming hot broth over it. It cooks in seconds. If you are nervous about that, you can quickly dunk the slices in the pot for 10 to 20 seconds first.

8) Top and serve. Go wild with herbs and crunch.

I am a big soup person in general, so if you want other easy bowls for busy nights, I rotate in things like this easy taco soup recipe when I want something totally different but still cozy.

“I made this on a Tuesday after work and my whole family thought I ordered takeout. The broth tasted way more legit than I expected, and the toppings made it feel special.”

What is Pho?

Pho is a Vietnamese noodle soup that is all about the broth. You get rice noodles, usually beef or chicken, and a pile of fresh toppings that you add yourself. The hot broth hits the herbs and onions and wakes everything up right in the bowl.

Beef pho is often called pho bo. Chicken is pho ga. In restaurants, beef pho can come with different cuts like brisket, meatballs, tendon, or thin raw steak that cooks when the broth is poured on top.

For this Easy Pho Recipe — Vietnamese Pho Soup, the idea is to keep it simple and still nail the vibe. The spices are the signature. Star anise and cinnamon might sound like dessert, but in broth they turn warm and savory. Add fish sauce for that deep salty backbone, and suddenly it tastes like you worked way harder than you did.

Also, do not underestimate the role of texture. Soft noodles, tender beef, crunchy bean sprouts, and fresh herbs all in one bite is what makes pho feel like more than just soup.

On days I want something lighter and super fresh, I also make this easy cucumber soup recipe. Totally different flavor profile, but it hits that same feel good homemade mood.

Pho Toppings And Sauces

This is where you can make your bowl taste like your bowl. I always put everything on a big plate in the middle of the table and let people build their own. It feels fun and nobody complains because they chose it.

My must have toppings:

• Fresh herbs: cilantro, Thai basil, mint if you like it
• Bean sprouts: for crunch
• Thin sliced white onion or scallions
• Lime wedges
• Sliced jalapeno or Thai chiles

Sauces people usually add:

Hoisin sauce for sweetness and depth, and sriracha for heat. Some folks mix them right in, but I like dipping the beef in a little hoisin on the side. If you dump a lot of hoisin into the broth, it changes the flavor fast, so go slow.

One small tip that makes a big difference: add herbs at the end, not in the pot. You want them fresh and bright, not cooked and sad.

Best beef for Pho soup broth

Let us talk beef, because it can make or break your bowl. For quick pho at home, I usually use thin sliced steak that cooks in the bowl. You want something tender, not chewy.

Great choices:

Sirloin is my regular pick because it is easy to find and not too pricey. Ribeye is the splurge option and it is insanely tender. Filet works too, but it can feel a little wasteful for soup.

How to slice it thin without stress:

Pop the steak in the freezer for 15 to 20 minutes. It firms up just enough to slice thinly. Use a sharp knife and slice against the grain. If your slices are a little uneven, do not worry. Hot broth is forgiving.

If you want a deeper, more traditional beef flavor, you can simmer some beef bones for longer when you have time, then use that as your base. But for this Easy Pho Recipe — Vietnamese Pho Soup, the thin steak plus a well seasoned broth is the sweet spot between effort and reward.

Common Questions

Can I make the broth ahead of time?
Yes. Broth is even better the next day. Cool it, store it in the fridge, and reheat until it is steaming hot before serving.

Do I have to char the onion and ginger?
You can skip it, but I would not. That little bit of char adds a subtle smoky sweetness that makes the broth taste more restaurant like.

What noodles should I buy?
Look for dried rice noodles labeled pho or banh pho. Fresh rice noodles are great too if your store has them, just be gentle when you warm them.

How do I keep leftovers from getting mushy?
Store broth, noodles, and toppings separately. Noodles soak up broth and get soft if they sit together.

Is fish sauce required?
It is strongly recommended for the classic flavor. Start small if you are unsure. If you cannot use it, a pinch more salt and a splash of soy sauce can help, but it will taste different.

A cozy bowl you can actually pull off

If you have been craving pho but assumed it was too complicated, this Easy Pho Recipe — Vietnamese Pho Soup is proof you can make a satisfying bowl at home without turning it into an all day project. Focus on the spices, taste the broth as you go, and do not skip the fresh toppings.
