Panda Express Chow Mein

Easy Panda Express Chow Mein — Copycat Noodles is what I make when it is one of those nights where I want takeout comfort, but my wallet and my fridge both say, hey, cook something. You know the vibe: you are craving that slightly sweet, savory, glossy noodle situation, and you want it fast. This recipe hits that spot without making you learn any complicated tricks. It is simple, quick, and honestly kind of fun because it smells like your favorite mall food court in the best way. If you have picky eaters, tired grown ups, or just a noodle mood, this one saves the day.

Why I Love These Noodles

I keep coming back to this Easy Panda Express Chow Mein — Copycat Noodles recipe because it is reliable. Like, I can make it when I am energized and chopping happily, or when I am dragging and need dinner done before I start snacking on random crackers.

The texture is the whole deal for me. You get springy noodles, crisp cabbage, and that savory sauce that clings to everything instead of pooling at the bottom of the pan. It tastes like takeout, but fresher, and you can control the oil and salt.

Also, it is easy to customize. Sometimes I toss in leftover chicken, sometimes I keep it veggie, and sometimes I add a little heat when I need food with personality. If you love noodle dinners in general, you might also like my other chow mein vibe recipe here: chicken chow mein with the best chow mein sauce.

Ingredient Tips

Let us talk ingredients, because a few small choices make a big difference in getting that true Easy Panda Express Chow Mein — Copycat Noodles flavor. Nothing here is fancy, but the right combo makes it click.

What noodles should you use?

If you can find chow mein noodles (often in the refrigerated section), grab them. They cook fast and have that bouncy bite. If you cannot find them, thin spaghetti or ramen noodles (without the seasoning packets) work in a pinch. Just do not overcook. Soft noodles turn this dish from “yes!” to “meh” really quickly.

Here is what I normally use, in a practical, no stress way:

• Noodles: chow mein noodles, yakisoba noodles, or thin spaghetti
• Cabbage: green cabbage is classic, shredded thin
• Celery: sliced thin for that takeout crunch
• Onion: yellow or white, sliced
• Garlic: a couple cloves, minced
• Soy sauce: regular or low sodium
• Oyster sauce: gives that takeout depth (you can swap hoisin if needed)
• Brown sugar: just a little to balance the salt
• Sesame oil: a small drizzle for that classic aroma
• Neutral oil: like avocado or canola for stir frying

If you are cooking for someone who does not eat seafood, check your oyster sauce label, or use hoisin plus a splash more soy sauce. It will not be identical, but it will still be really good.

And if you are planning a whole cozy dinner spread, I love pairing noodles with a warm soup on the side. This creamy one is a favorite when it is chilly: deliciously easy creamy chicken corn chowder recipe.

How to Make Panda Express Chow Mein

This is the part where you realize you can totally pull off Easy Panda Express Chow Mein — Copycat Noodles at home without a wok and without flipping anything dramatically. You just need a big pan and a little confidence.

Quick sauce and cook steps

I like to mix the sauce first so I am not scrambling later. In a small bowl, stir together soy sauce, oyster sauce, brown sugar, and a tiny bit of sesame oil. You can add a splash of water if it looks super thick.

Then cook your noodles according to the package. Drain them and toss with a tiny bit of oil so they do not glue themselves together while you cook the veggies.

Now, heat a large skillet on medium high. Add neutral oil, then onions and celery. Cook for a couple minutes until they start to soften but still have bite. Add garlic and stir for about 30 seconds so it does not burn.

Add shredded cabbage and toss it around. You want it slightly softened but still crisp. This is where that restaurant texture lives.

Finally, add noodles and pour in the sauce. Use tongs to toss everything for a minute or two. The noodles should look glossy and smell like you are about to eat straight from the takeout box.

One more note: have everything chopped and ready before you start. It cooks fast, and you do not want your garlic getting sad in the pan while you are still shredding cabbage.

If you are in the mood for another copycat style comfort meal, I also make this on repeat when I want something hearty and creamy: easy chicken gnocchi soup Olive Garden copycat. It is a totally different flavor, but it scratches the same “restaurant at home” itch.

Recipe Tips

This is the section I wish someone had handed me the first time I tried making copycat noodles. Here are the little things that keep Easy Panda Express Chow Mein — Copycat Noodles tasting like the real deal.

Do not overcook the noodles. If your noodles are mushy, they will not hold sauce well and the dish turns heavy.

Keep veggies thin. Thin sliced cabbage and celery cook quickly and feel more like takeout.

Use high heat, but do not panic. Medium high is usually perfect. You want a little sizzle, not burnt bits.

Add protein if you want. Rotisserie chicken, shrimp, or thin sliced steak are all great. Cook protein first, then remove it, cook veggies, and add it back at the end.

Taste before serving. Sometimes noodles need a tiny splash more soy sauce, or a pinch more sugar to balance. Go slowly and taste as you go.

If you are building a full dinner menu, I will admit I often double up on cozy recipes in the same week. Make Ahead and Storage

Easy Panda Express Chow Mein — Copycat Noodles is best right after cooking, when the cabbage is still a little crisp and the noodles are perfectly springy. But leftovers are still very solid, especially for lunch.

Here is what I do:

Make ahead: You can slice all veggies and mix the sauce up to 2 days ahead. Store veggies in an airtight container and sauce in a small jar. Cook noodles fresh if you can, since pre cooked noodles can clump.

Fridge: Store leftovers in a sealed container for up to 3 days.

Reheat: Reheat in a skillet with a tiny splash of water to loosen the sauce. Microwave works too, but the skillet keeps the texture better.

Freezing: I do not love freezing this because cabbage can get watery, but if you must, freeze in portions and reheat in a hot skillet. Expect softer veggies.

And if you are on a copycat kick and want another cozy option for meal prep, I have to mention this again because people always ask for it: easy chicken gnocchi soup Olive Garden copycat. It holds up really well for leftovers too.

Common Questions

1) Can I make this gluten free?
Yes. Use gluten free noodles and swap in gluten free soy sauce (tamari). For oyster sauce, look for a gluten free version or use a gluten free hoisin style sauce.

2) Why do my noodles turn out dry?
Usually it is because the pan is too hot for too long after the sauce goes in, or the noodles were over drained and sat too long. Add a splash of water and toss quickly to bring the sauce back.

3) Can I add more vegetables?
Totally. Shredded carrots, bean sprouts, bell peppers, or snap peas all work. Just keep the cuts thin so everything cooks evenly.

4) What protein goes best with it?
Chicken is the easiest, especially leftover or rotisserie. Shrimp is great too. If you want a full chow mein dinner idea, this recipe is a helpful companion: chicken chow mein with the best chow mein sauce.

5) Is sesame oil required?
Not required, but it adds that familiar takeout aroma. Use just a little, and add it at the end for the best flavor.
