pancakes from scratch

Easy Sourdough Discard Pancakes — No Waste Fluffy are basically my weekend lifesaver when I open the fridge and see that little jar of starter discard staring back at me. I used to feel weirdly guilty tossing it, like I was throwing away future bread. Then I realized pancakes are the easiest, happiest way to use it up. You get that cozy tang, soft centers, and those golden edges that make you want “just one more.” If you have a bowl and a pan, you can do this, even if you are not a morning person. Let’s turn that discard into something you actually get excited about eating.

Sourdough Discard Pancake Recipe

This is my go to base recipe. It’s simple, flexible, and it doesn’t ask you to do anything fussy at 8 a.m. The discard brings flavor and tenderness, and the rest is pantry stuff. If you like pancakes that feel light but still filling, this one hits the sweet spot. Also, if you are a pancake person in general, you might want to peek at these easy banana oat pancakes with no flour for another quick breakfast idea.

Ingredients you will need

• Sourdough discard: 1 cup, room temp is best but cold is fine
• Milk: 3/4 cup (dairy or unsweetened non dairy)
• Egg: 1 large
• Melted butter or neutral oil: 2 tablespoons (plus a little for the pan)
• Brown sugar or regular sugar: 1 to 2 tablespoons (optional, but I like it)
• Vanilla extract: 1 teaspoon
• All purpose flour: 1 cup
• Baking powder: 2 teaspoons
• Baking soda: 1/2 teaspoon
• Salt: 1/2 teaspoon

Quick directions

• In a bowl, whisk discard, milk, egg, melted butter, sugar, and vanilla.
• Sprinkle flour, baking powder, baking soda, and salt on top. Stir until you don’t see dry flour. Small lumps are totally fine.
• Let the batter sit 5 to 10 minutes while you warm your pan.
• Cook on medium to medium low with a lightly greased pan. Flip when bubbles show and the edges look set.

Little tip: If your discard is super thick, add a splash more milk. If it’s runny, hold back a bit of milk at first. Sourdough is moody like that.

How to Make Fluffy Sourdough Pancakes

Fluffy pancakes are not about fancy tricks. They are about a few small choices that add up. With sourdough discard, you already have a head start because it helps with texture. Here is what actually makes a difference when you want that soft, puffy stack.

1) Don’t overmix. I know every recipe says this, but it matters. Stir just until the flour disappears. Overmixing makes pancakes tougher and flatter.

2) Give the batter a short rest. Even 5 minutes helps the flour hydrate and the bubbles start forming. This is one of my easiest “do nothing” steps for fluffy results.

3) Watch your heat. Too hot and you burn the outside while the inside stays raw. Too low and they dry out before they brown. Medium low is usually the sweet spot on most stoves.

4) Flip once. When you see bubbles popping on top and the edges look less shiny, it is ready. Don’t smash it down with the spatula after flipping, either. Let it rise.

If you are into cloud like pancake vibes, you would probably love these easy Japanese fluffy pancakes souffle style. They are a totally different project, but so fun.

“I used my sourdough discard for these and my kids said they taste like restaurant pancakes. I froze the extras and they still reheated soft. This recipe is a keeper.”

By the way, I’m going to say it clearly because it matters for this post: Easy Sourdough Discard Pancakes — No Waste Fluffy are all about using what you already have and still getting that dreamy texture.

Variations to Try

Once you make these once, you will start tinkering. I do it all the time depending on what’s in the kitchen, or what mood my family is in. Here are a few easy swaps and add ins that work without changing the whole recipe.

Chocolate chip: Add a small handful of chocolate chips right after you pour the batter onto the pan. This keeps them from sinking in the bowl.

Blueberry lemon: Fold in blueberries and add lemon zest. That little tang from the sourdough plus lemon is so good.

Cinnamon roll moment: Add 1/2 teaspoon cinnamon to the batter, then swirl a quick cinnamon sugar paste on top while cooking. Not perfect, still delicious.

Higher protein: Serve with Greek yogurt or nut butter, or check out these easy protein pancakes that are gluten free and fluffy when you want something more fitness friendly.

Banana twist: Mash a ripe banana into the wet ingredients and reduce the sugar a bit. If you love banana breakfasts, I also keep coming back to these banana oat pancakes with no flour when I want something extra easy.

And yes, you can absolutely keep the vibe going with more tall and airy pancakes like these Japanese souffle style fluffy pancakes on a slow Sunday morning.

Storage & Reheating

I’m a big fan of making a double batch, because pancakes reheat way better than people think. These keep their tenderness nicely, especially when you don’t overcook them the first time.

To store in the fridge: Let pancakes cool completely, then stack with a little parchment between them (optional but helpful). Keep in an airtight container for up to 3 days.

To freeze: Lay them in a single layer on a sheet pan until frozen, then move to a freezer bag. They won’t stick together as much, and you can grab just what you need. They’re best within 2 months.

To reheat:

• Toaster: My favorite for crispy edges. Use a low to medium setting.
• Microwave: 15 to 30 seconds for 1 to 2 pancakes. Cover with a damp paper towel so they stay soft.
• Oven: Wrap a stack in foil and warm at 325 F for 8 to 12 minutes.

If you are meal prepping breakfasts, label the freezer bag with the date. Future you will be very grateful.

What is Sourdough Discard?

Sourdough discard is the portion of starter you remove before feeding it, usually so the jar doesn’t grow into a science experiment. It still has flour and water, plus that fermented flavor, but it’s not always strong enough to raise bread on its own. That’s why it works so well in recipes like pancakes, waffles, crackers, and quick breads.

A few helpful things to know:

It can be fresh or old. If it has been in the fridge for a week, it will taste more tangy. That tang is awesome in pancakes.

It should smell pleasant. Think sour, yeasty, maybe a little fruity. If you see pink or orange streaks, or it smells truly rotten, toss it.

Consistency varies. Some starters are thick like paste, others pour. That’s why you may need a splash more milk or a pinch more flour.

And since this post is about Easy Sourdough Discard Pancakes — No Waste Fluffy, here’s the main point: discard is not trash. It’s an ingredient, and it can make breakfast feel special without extra work.

Common Questions

Can I make the batter the night before?
You can mix the wet ingredients and dry ingredients separately, then combine in the morning. Fully mixed batter can lose some fluff overnight because the bubbles relax.

Do these taste sour?
A little tang, yes, but in a good way. If your discard is very old, the sour flavor will be stronger. Add a touch more sugar and vanilla if you want it mellower.

Why are my pancakes flat?
Usually it’s overmixing, batter sitting too long after mixing, or the pan being too hot. Also check that your baking powder is fresh.

Can I make them dairy free?
Yep. Use almond milk or oat milk and swap the butter for oil or a dairy free butter. They still come out soft.

What pan works best?
Nonstick is easiest, but a well seasoned cast iron skillet works too. Just keep the heat steady and don’t rush the flip.
