Mexican Grilled Chicken

Easy Pollo Asado Mexican Citrus Grilled Chicken is my go to move when I want something that tastes like I actually tried, but I do not want to spend my whole evening in the kitchen. You know those days when you are hungry, the fridge is random, and takeout feels too expensive and kind of sad? This is the fix. It is bright, a little smoky, juicy in the middle, and it makes your kitchen smell like something really good is happening. The best part is the marinade does most of the work while you do literally anything else.

What is Pollo Asado?

Pollo asado is basically grilled chicken that is marinated with citrus and warm spices, then cooked until it has those tasty browned edges. You will see it in Mexican cooking in different ways depending on the region and the family. Some versions lean more orange and garlic. Some add achiote for color and that earthy flavor. Some people keep it super simple with lime, salt, and pepper and call it a day.

What makes it special is the combo of tangy citrus plus savory seasoning. It tastes fresh, not heavy. And it is the kind of chicken that is just as good tucked into tacos as it is piled on rice.

“I made this on a Sunday and we ended up eating it three different ways all week. It stayed juicy, and the citrus flavor made it feel fresh even as leftovers.”

Ingredient Notes and Substitutions

Let us keep this practical. This is not one of those recipes where you need a special store run for twelve rare things. Most of the flavor comes from citrus, garlic, and a few pantry spices. And yes, you can adjust based on what you have.

What you will need

• Chicken: thighs are my favorite for juicy results, but breasts work too
• Orange juice: fresh is great, bottled is fine
• Lime juice: adds that sharp punch
• Garlic: more is never a bad idea here
• Oil: helps the chicken brown and keeps it from sticking
• Spices: cumin, smoked paprika or regular paprika, oregano, black pepper
• Salt: do not be shy, it brings everything together
• Optional: a little soy sauce for deeper savory flavor, or a pinch of chili powder for gentle heat

Substitution tips I have actually used:

• No oranges? Use more lime plus a splash of pineapple juice if you have it.
• No oregano? Italian seasoning works in a pinch. It is not identical, but it still tastes good.
• Want it spicier? Add chipotle powder or a chopped jalapeno to the marinade.
• Only have chicken breasts? Pound them a little so they cook evenly and do not dry out.

And if you are the kind of person who likes to keep a reliable base marinade in your back pocket, you should peek at this easy grilled chicken marinade. I use that one when I want a more classic backyard flavor.

How to Make Pollo Asado

This is the part where you realize how simple this really is. The only “hard” thing is remembering to give the chicken a little time in the marinade. Even 30 minutes helps, but longer is better.

My simple step by step

1) Mix the marinade. In a bowl, stir together orange juice, lime juice, oil, minced garlic, cumin, paprika, oregano, salt, and pepper. If you are using soy sauce or chili powder, add it now.

2) Add the chicken. Put chicken in a zip top bag or a shallow dish and pour the marinade over it. Toss so everything is coated.

3) Marinate. Refrigerate at least 30 minutes. If you can do 2 to 6 hours, even better. I do not usually go past overnight because the citrus can start to change the texture.

4) Cook. Grill is the classic move, but you have options (I will cover them below). Cook until the chicken is browned and cooked through.

5) Rest, then slice. Let it rest 5 minutes before slicing. It helps the juices stay put, so your cutting board is not a puddle.

One little real life note: if you are making Easy Pollo Asado Mexican Citrus Grilled Chicken for a group, double the marinade and cook extra. Leftovers are gold. I swear it tastes even better the next day in tacos.

Also, if you are in a sandwich mood after grilling, you can turn leftovers into something fun like this easy chicken torta. It is messy in the best way.

Cooking Methods for Pollo Asado

Grill is the traditional choice, but I am not here to judge your apartment setup or the weather outside. I have made this in a grill pan, in the oven, and yes, even in a pinch on the stovetop with a regular skillet.

Grill (gas or charcoal)
This gives you that smoky char that makes the citrus pop. Preheat the grill, oil the grates, and cook over medium high heat. Thighs usually take about 5 to 7 minutes per side depending on thickness. Breasts can take a bit longer. Watch for flare ups because the marinade has oil and sugar from citrus.

Grill pan
Great for weeknights. Heat it well first, then cook like you would on a grill. You still get nice marks and good browning. Open a window because it can get a little smoky.

Oven bake
If you want the easiest hands off route, bake at 425 F on a sheet pan. Flip once halfway through. At the end, you can broil for a minute or two to get the top a bit charred. Keep an eye on it though. Broilers get intense fast.

Skillet
This is for when you want quick browning and you do not want to turn on the oven. Use medium high heat with a little oil. Do not crowd the pan or the chicken will steam instead of brown.

If you ever want to take Mexican chicken in a totally different direction for a special dinner, try easy chicken mole. It is rich and saucy and feels like a treat.

Pollo Asado Recipe Serving Suggestions

This chicken is ridiculously flexible. I usually plan leftovers on purpose because it is one of those proteins that makes fast meals feel exciting.

• Tacos: chopped chicken, warm tortillas, onion, cilantro, and extra lime
• Rice bowls: rice, black beans, chicken, salsa, avocado, and shredded lettuce
• Salad: romaine, grilled corn if you have it, pepitas, and a creamy lime dressing
• Quesadillas: chicken plus melty cheese, crisped in a skillet
• Meal prep boxes: chicken, roasted peppers and onions, and a scoop of rice

My favorite lazy lunch is turning it into a melty sandwich situation. If that sounds like you too, try this easy chicken avocado melt grilled cheese sandwich. It is not traditional, but it is so good.

And yes, I have to say it again because it is the whole point: Easy Pollo Asado Mexican Citrus Grilled Chicken is the kind of recipe that fits into your life. It works for parties, weeknights, and those “I need real food” moments.

Common Questions

Can I use chicken breasts instead of thighs?
Yes. Just watch the cooking time closely and consider pounding them a bit so they cook evenly. Breasts dry out faster than thighs.

How long should I marinate?
Thirty minutes is the minimum for decent flavor. Two to six hours is my sweet spot. I try not to go much longer than overnight because citrus can affect texture.

How do I know it is cooked through?
The safest way is a thermometer. You want 165 F in the thickest part. If you do not have one, cut into the thickest piece and check that the juices run clear and the center is not pink.

Can I freeze it?
Yes. You can freeze the raw chicken in the marinade in a freezer bag. Thaw in the fridge overnight, then cook. You can also freeze cooked slices for quick meals.

What if I do not have a grill?
No problem. Use a grill pan, oven, or skillet. You will still get bold citrus flavor, and you can broil for a minute at the end to mimic a little char.
