Layer Cake Recipe

Easy Pink Lemonade Cake — Summer Layer Dessert is my go to fix for those days when it’s too hot to bake something fussy, but you still want a pretty dessert that feels like a treat. You know the vibe, friends are coming over, the kids want something sweet, and you do not want to stand in the kitchen forever. This cake is bright, soft, and tangy with that playful pink color that instantly says summer. It’s also a layered dessert, so it looks impressive even though the steps are simple. If you’ve ever had lemonade at a backyard cookout, this tastes like that, just in cake form.

Easy Lemon Cake Recipe from Scratch

I’ve made a lot of lemon cakes over the years, and the best ones always start with real lemon flavor. Not artificial candy lemon. Real, fresh, wake you up lemon. This recipe is friendly for beginners because you do not need fancy tools. A couple bowls, a mixer, and standard pans are enough.

Here’s what I typically grab before I start. I like having everything on the counter so I’m not hunting for stuff mid mix.

• Fresh lemons for zest and juice
• Butter and sugar for that classic soft cake base
• Eggs, room temperature if you can
• Milk or buttermilk for tenderness
• Cake flour or all purpose flour (more on that later)
• Baking powder, a pinch of salt, and vanilla
• Pink lemonade drink mix or concentrate for the signature flavor

My quick directions are pretty simple. Cream butter and sugar until it looks fluffy. Add eggs one at a time. Mix in lemon zest, lemon juice, and vanilla. Then alternate your dry ingredients with milk until the batter looks smooth. Divide into pans and bake until a toothpick comes out with just a few moist crumbs.

If you love layered desserts in general, you might also be into this one for another day: easy banana pudding cheesecake no bake layered dessert. It’s a totally different flavor, but the same easy, fun payoff.

One more little thing. Let the layers cool completely before frosting. I know it’s tempting, but warm cake plus frosting equals sliding layers and a messy kitchen counter.

How to Make a Moist Lemon Cake

Moist lemon cake is all about a few small choices that make a big difference. I used to think lemon cake was just supposed to be a little dry, like it came with the territory. Nope. It can be soft and plush if you do it right.

These are my best real life tips:

Do not overmix. Once the flour goes in, mix just until it comes together. Overmixing makes cake tough, and nobody wants that.

Use buttermilk if you can. It adds a gentle tang and keeps the crumb tender. If you do not have it, milk works fine, but buttermilk is my favorite.

Add a quick lemon soak. This is optional but so good. Mix lemon juice with a little sugar and brush it over the warm layers. It sinks in and keeps everything extra juicy.

Don’t overbake. Lemon cakes dry out fast if they sit in the oven too long. Start checking a few minutes early.

Also, if you’re planning a summer dessert table, I’ve had people pair this cake with cinnamon sugar treats and it somehow works. If that sounds fun, this is worth bookmarking: easy churro cake cinnamon sugar layered dessert.

“I made this for a pool day and people thought it came from a bakery. The lemon flavor was bright, the layers stayed moist, and the pink frosting was adorable.”

What Makes This a Pink Lemonade Cake

So what’s the difference between a regular lemon cake and an Easy Pink Lemonade Cake — Summer Layer Dessert? It’s not just food coloring, I promise. The whole point is that pink lemonade has its own vibe. It’s still lemony, but it’s slightly sweeter and feels more playful.

Here’s what gives it that pink lemonade personality:

Pink lemonade mix or concentrate: I use it in the frosting and sometimes a little in the cake batter. It adds that familiar “pink lemonade” flavor that people recognize right away.

A tiny touch of pink color: Optional, but it helps match the flavor expectation. I usually add the smallest drop and stop. You can always add more, but you cannot take it out.

Frosting with a tang: My favorite frosting here is a lemon buttercream with pink lemonade mix sifted in. If you prefer cream cheese frosting, that also works, especially if you like a little extra tang.

For serving, I like adding lemon slices, fresh berries, or even a few sprinkles if kids are around. When I’m being extra, I stack the layers tall and do swirls on top. It’s the kind of cake that makes people grab their phones before they grab a fork.

And if you want an even more “cold treat” style layered dessert for a super hot day, keep this one handy too: easy ice cream cake no bake layered dessert. It’s a lifesaver when the oven sounds like torture.

Difference Between Cake Flour and All Purpose

This is one of those questions that comes up every time someone bakes a layer cake. I’ve used both, and yes, it matters, but it’s not something to stress over.

Cake flour has less protein than all purpose flour. Less protein usually means a softer, lighter cake. All purpose flour gives a slightly sturdier crumb. For an Easy Pink Lemonade Cake — Summer Layer Dessert, I lean toward cake flour when I want the layers to feel fluffy and bakery style. But if all you have is all purpose flour, you can still make a really good cake.

My practical advice:

If you have cake flour, use it. It gives you that soft bite that feels fancy.

If you only have all purpose flour, go ahead. Just be extra careful not to overmix and do not overbake.

Do not swap cup for cup with random internet tricks unless you trust them. If you want to DIY cake flour, you can, but measuring needs to be accurate or your texture can get weird.

By the way, if you’re building a “layer dessert” habit like I clearly have, here’s another one I love for parties: easy banana pudding cheesecake no bake layered dessert. It’s creamy and mellow next to this bright lemony cake.

Pink Lemonade Cupcakes

Sometimes you want the flavor but not the whole layered situation. I get it. Cupcakes are quicker, easier to share, and honestly less stressful if you’re transporting dessert somewhere.

Here’s how I turn this into cupcakes without overthinking it:

Use the same batter and fill liners about two thirds full.

Bake at the same temperature, but start checking early. Cupcakes usually take around 16 to 20 minutes depending on your oven.

Core and fill if you want. You can scoop a tiny hole and spoon in a little pink lemonade curd or even a thickened lemonade syrup. This is optional, but it makes people say “wait, what is in here?” in the best way.

Swirl frosting high. Pink lemonade buttercream looks so cute piled on top, especially with a little lemon zest.

If you’re doing a dessert spread and want a cinnamon contrast next to the cupcakes, I’d pair them with this: easy churro cake cinnamon sugar layered dessert. It’s cozy and sweet next to the tangy lemon.

Common Questions

Can I make this cake the day before?

Yes, and it’s actually better that way. The flavor settles in, and the layers slice cleaner. I just cover it well and keep it in the fridge.

Do I have to use food coloring?

Nope. It will still taste like pink lemonade if you use the mix or concentrate. The color is just for fun.

What frosting works best?

Pink lemonade buttercream is the classic choice. If you like tangy frosting, lemon cream cheese frosting is also great, especially for summer.

Can I freeze the cake layers?

Yes. Wrap cooled layers tightly in plastic wrap, then add a freezer layer like foil. Freeze up to 2 months. Thaw in the fridge overnight.

How do I keep the layers from sliding?

Make sure the cake is completely cool, and chill the frosting a bit if your kitchen is warm. A short chill after crumb coating helps a lot too.
