Easy Cannellini Bean Soup — Italian White Bean is my go to fix for those nights when you open the fridge, stare into the chaos, and think, I cannot deal with a complicated dinner. I have made this soup when I was tired, when it was rainy, and even when friends texted they were stopping by in an hour. It is cozy, filling, and honestly kind of forgiving if you are missing a thing or two. The best part is that it tastes like you worked harder than you did. Let me walk you through how I make it at home, in a super relaxed way that still turns out really delicious.
Why You’ll Love This Recipe
This is the kind of soup that makes your kitchen smell like you have your life together. It is simple, hearty, and built around pantry basics, but it still feels special thanks to garlic, herbs, and a little olive oil.
Here is why it keeps ending up on my weekly rotation:
- Fast enough for weeknights if you use canned beans
- Budget friendly and makes a big pot
- Comforting but not heavy, especially with a squeeze of lemon at the end
- Easy to customize with greens, pasta, sausage, or whatever is hanging around
If you love bean soups in general, you might also like this one with a cozier, meatier vibe. I have made it for Sunday dinner and it disappears fast: Deliciously Hearty Tuscan White Bean Soup with Meatballs.
“I made this on a cold weeknight and my whole family went back for seconds. The lemon at the end was the little trick that made it taste bright and fresh.”
Key Ingredients
The ingredient list is short, but each piece matters. I am not precious about it, though. If you are missing one herb or you have a different green, it is still going to be good.
What you will need
- Cannellini beans: 2 to 3 cans, drained and rinsed. You can use cooked dried beans too.
- Olive oil: do not skip it. It gives that classic Italian comfort flavor.
- Onion and garlic: the base that makes it smell amazing.
- Carrot and celery: optional but I like the little sweetness and balance they add.
- Broth: vegetable or chicken, whatever you have.
- Tomato paste: just a spoon or two for depth, not to make it “tomato soup.”
- Italian seasoning or dried rosemary and thyme
- Greens: spinach, kale, or Swiss chard. Even a handful of arugula works in a pinch.
- Lemon: a squeeze at the end wakes up the whole pot.
- Parmesan: for serving, plus the rind if you have it for simmering.
Little personal tip: if you have a parmesan rind tucked in your fridge, drop it into the pot while the soup simmers. It adds a subtle salty richness that makes the soup taste slow cooked.

How to Make Italian White Bean Soup
This is the part where you realize you can absolutely pull off a great dinner without measuring everything like a science project. I make this soup in one pot, and I keep it pretty low stress.
Step by step in a real life kitchen
1. Saute the base. Warm a couple tablespoons of olive oil in a big pot over medium heat. Add chopped onion, carrot, and celery. Let it cook until everything softens, about 6 to 8 minutes. Add garlic and stir for 30 seconds, just until it smells good.
2. Build flavor. Stir in tomato paste and your herbs. Let it cook for a minute so it does not taste raw. If you like a little heat, add a pinch of red pepper flakes.
3. Add beans and broth. Add your cannellini beans and broth. If you have that parmesan rind, now is the time. Bring it to a gentle simmer and let it go for about 15 to 20 minutes.
4. Make it creamy without cream. Scoop out about 1 to 2 cups of soup, beans and all, and blend it until smooth, then stir it back in. You can use a blender or an immersion blender. This is the trick that gives that creamy body while keeping the soup light.
5. Add greens. Toss in spinach or kale and let it wilt for a couple minutes.
6. Finish like you mean it. Turn off the heat. Add a squeeze of lemon, taste for salt and pepper, and drizzle a little extra olive oil on top.
That is it. Easy Cannellini Bean Soup — Italian White Bean is one of those recipes where the finishing touches matter more than fancy steps.

Serving Suggestions
I love serving this when people are coming over because it feels warm and generous, but I am not stuck in the kitchen all night. Here are a few easy ways to make it a full meal.
- Crusty bread: the obvious choice, and the best one.
- Parmesan and black pepper: do not be shy with either.
- Extra olive oil drizzle: makes it taste restaurant level with almost no effort.
- Something crunchy: a simple salad or roasted broccoli on the side.
- Add protein: shredded rotisserie chicken, cooked sausage, or even meatballs.
Sometimes I do a little soup night spread with two pots simmering, especially if I am feeding a mix of appetites. If you want a heartier option with meatballs, this is the one I pair it with: Deliciously Hearty Tuscan White Bean Soup with Meatballs. People love having options and it makes dinner feel kind of fun.
How to Store and Freeze
This soup is a meal prep dream. It also tastes better the next day, which feels like a small gift from past you.
Storage tips that actually work
In the fridge: Let the soup cool, then store it in an airtight container for up to 4 days. The beans soak up broth over time, so it will thicken.
To reheat: Warm it on the stove over medium low heat. Add a splash of broth or water if it got too thick. Taste again for salt, then add a fresh squeeze of lemon to bring it back to life.
In the freezer: Freeze in portions for up to 3 months. I like freezer containers or sturdy zip bags laid flat. Thaw overnight in the fridge or warm gently from frozen on the stove.
One note about greens: Spinach holds up fine, but kale can get a little softer after freezing. Still tasty, just a different texture.
Common Questions
Can I use dried cannellini beans instead of canned?
Yes. Cook them first until tender, then use them like canned beans. You will need about 4 to 5 cups cooked beans for a big pot.
How do I make it thicker without adding cream?
Blend part of the soup and stir it back in. It is my favorite trick for Easy Cannellini Bean Soup — Italian White Bean because it keeps the flavor clean and still feels rich.
Do I have to add tomato paste?
No, but it adds a little depth. If you skip it, consider adding a bit more garlic or herbs, and make sure you finish with lemon.
What greens work best?
Spinach is the easiest. Kale and Swiss chard are great too. If you use kale, give it a few extra minutes to soften.
Can I make it spicy?
Totally. Add red pepper flakes with the garlic, or stir in a spoon of spicy chili oil at the end.
