Italian Herb and Cheese Bread

Delicious Italian Herb and Cheese Bread Recipe is my go to move when I want my kitchen to smell amazing but I do not want to fuss with anything complicated. You know those days when you planned a simple sandwich night, then you realize your bread is sad, stale, or missing entirely? Yep, that is when I start mixing flour and daydreaming about melty cheese. This loaf is soft on the inside, a little chewy, and the top gets that salty, herby crust that makes you keep “taste testing” slices. It is also super friendly for beginners because the steps are simple and forgiving. Let’s make the kind of bread that makes everyone hover near the cutting board.

Ingredients and Substitutions

I like to keep this bread pretty classic because it nails that familiar sub shop vibe. But I will also tell you where you can swap things if your pantry is doing that “almost empty” thing.

• Warm water (not hot): Helps wake up the yeast. If it is too hot, it can mess with it.
• Active dry yeast: Instant yeast works too, just mix it right in with the flour and still use warm water.
• Sugar: Just a little, to help the yeast get going. Honey works fine as a swap.
• Olive oil: Adds softness. You can use melted butter if you want richer flavor.
• All purpose flour: Bread flour will make it a little chewier, but all purpose is totally great.
• Salt: Do not skip it, this is what makes it taste like real bread and not a bland pillow.
• Italian seasoning: Easy and convenient. If you do not have it, you can build your own with oregano and basil.
• Garlic powder: Optional, but honestly I always add it.
• Grated Parmesan: For that salty bite. Asiago is also amazing here.
• Shredded mozzarella: For gooey melt and that stretchy feel when you pull a piece apart.
• Egg wash (1 egg plus a splash of water): Helps the topping stick and makes the crust shiny.

Quick pantry note: if you are missing mozzarella, a mild cheddar works, but it will taste less “sub shop” and more “grilled cheese energy.” Not a bad thing, just different.

And if you are planning a cozy meal with this bread, I love pairing it with soups. My favorite is this cozy and delicious lentil soup because the bread is perfect for dipping and swiping the bowl clean.

How to Make Subway Bread

Ok, let’s talk about the fun part. When I say “Subway style,” I mostly mean the shape, the soft inside, and that herby cheesy top. You can make this as one big loaf, but it really shines as two to four long sandwich rolls.

Step by step, in real life language

1) In a large bowl, stir warm water, sugar, and yeast. Let it sit about 5 to 10 minutes. You want it a little foamy on top, like it is alive and ready to work.

2) Add olive oil, salt, and about half the flour. Stir until it looks like a sticky batter.

3) Add the rest of the flour little by little until it forms a dough that is soft and slightly tacky, but not a glue situation. If it sticks to your hands a lot, add a spoon of flour. If it feels dry, add a tiny splash of water.

4) Knead it for about 8 minutes by hand, or about 5 minutes in a mixer. You are looking for a dough that feels smooth and stretchy.

5) Put the dough in an oiled bowl, cover it, and let it rise until doubled. In a warm kitchen, that is usually about 60 to 90 minutes.

6) Shape it into long rolls. I usually do 3 medium sub rolls. Place them on a lined baking sheet, cover lightly, and let them rise again for 30 to 45 minutes.

7) Heat your oven to 375 F. Mix your topping: Parmesan, mozzarella, Italian seasoning, and a pinch of garlic powder.

8) Brush the rolls with egg wash, then pile on the topping. Press it gently so it sticks.

9) Bake 18 to 24 minutes, depending on size, until golden and your kitchen smells like you should open a small bakery.

Let them cool at least 15 minutes before slicing. I know that is torture, but if you slice too early the inside can get gummy.

Side note: if you want something snacky while the dough rises, these easy air fryer fried pickles are dangerously good. It is like the perfect “waiting for bread” activity.

“I made these rolls for a family sub night and everyone kept asking where I bought the bread. The cheesy top is the best part, and it was way easier than I expected.”

What Herbs Go Well in Bread?

This is where you can really make the Delicious Italian Herb and Cheese Bread Recipe feel like your own. Herbs change everything. The bread still works even if you switch things up, so do not stress about being exact.

My favorite herb combos

If you want that classic Italian sub shop vibe, these are my go to picks:

Oregano and basil: The most familiar, like pizza in bread form.

Parsley and garlic: Fresh tasting and super sandwich friendly.

Rosemary: Stronger and a little woodsy, so use less. Amazing with turkey or roast beef sandwiches.

Thyme: Gentle and cozy, really nice if you are serving soup on the side.

Fresh herbs are great, but dried herbs are honestly easier for this recipe and they hold up well in the oven. If you are using fresh, chop them finely and use about three times the amount compared to dried.

If you are building a comfort food dinner around this bread, it also goes so well with a warm bowl of Italian wedding soup. Something about herbs in the bread plus a cozy soup situation just makes sense.

Zero Waste Tips and Storage

I hate wasting homemade bread because it feels like throwing away time and love, you know? The good news is this bread stores well and also turns into other delicious things when it is not at its freshest.

Storing on the counter: Keep the rolls in a bag or airtight container for up to 2 days. If your kitchen is super dry, toss in a paper towel to help prevent the crust from getting too hard.

Freezing: This is the move. Let the bread cool completely, then wrap each roll tightly and freeze for up to 2 months. Reheat in the oven at 325 F until warmed through, or toast slices straight from frozen.

Reviving day old bread: Sprinkle the crust lightly with water and warm it in the oven for 8 to 10 minutes. It helps bring back that fresh baked feel.

Ways to use leftovers so nothing goes to waste

Homemade croutons: Cube it, toss with olive oil, salt, and Italian seasoning, then bake until crisp.

Garlic bread toast: Butter, garlic powder, sprinkle of Parmesan, quick broil.

Breakfast strata: Tear the bread into pieces, soak with eggs and milk, add cheese, bake. It is cozy and great for weekends.

If you end up with extra bread and want another easy comfort side, I love serving it with a slice of skillet cornbread with a buttery crust when we have a crowd. Two breads might sound silly, but people go wild for options.

Family-Favorite Sandwich Recipes

This is where the Delicious Italian Herb and Cheese Bread Recipe really earns its keep. The whole point is sandwiches that taste like a treat, even if the filling is simple.

Turkey, provolone, and crunchy lettuce: Add mayo and a little mustard, and you are done. The herbs in the bread do the heavy lifting.

Italian style veggie: Tomatoes, cucumbers, red onion, shredded lettuce, oil and vinegar, and a sprinkle of salt and pepper. Add mozzarella if you want it extra filling.

Meatball sub night: Warm meatballs in marinara, stuff into the roll, top with mozzarella, and broil until bubbly. This one makes people very happy.

Chicken salad with pickles: The cheesy crust plus tangy pickles is a real combo.

If you want another family friendly main to go with sandwich night, this Instant Pot creamy chicken and rice is a cozy option for a different night when you still want low effort comfort food.

One more fun thing: set up a little sandwich bar and let everyone build their own. Put out sliced veggies, a couple spreads, and a protein or two. It turns a basic dinner into a whole vibe.

Common Questions

Can I make this bread without a stand mixer?

Yes. I do it by hand all the time. Knead on the counter until the dough feels smooth and stretchy, about 8 minutes.

Why did my bread turn out dense?

Usually it needs more rise time, or your yeast was old. Also make sure your water is warm, not hot.

Can I make the dough ahead of time?

Yep. After the first rise, shape the rolls, cover, and refrigerate overnight. Let them sit out about 30 to 45 minutes before baking.

How do I get the topping to stick better?

Use egg wash and gently press the cheese and herbs onto the dough. If you skip the egg wash, a lot of topping will slide off.

Is this the same as the bread from Subway?

It is a copycat style at home, so it is not identical, but it gives you that soft sub roll texture and the cheesy herb top that people love.
