homemade potato soup

Easy Hearty Homemade Potato soup is my go-to when the day feels long and everyone’s hungry for something cozy. It’s thick, creamy, and simple enough to pull off on a busy weeknight. If you’ve got potatoes, an onion, a few pantry basics, and a splash of milk, you’re already most of the way there. This is the kind of bowl that makes the kitchen smell amazing and makes you feel taken care of. I’ll walk you through every step, share swaps and storage tips, and show you how to tweak it for your crew. Let’s make dinner feel easy and comforting tonight.

Why You’ll Love This Recipe

There’s a reason I keep this recipe taped to the inside of my cupboard. It’s simple, flexible, and uses ingredients I already have. It’s also a reliable crowd-pleaser that’s easy to scale up for friends or down for lunch leftovers. The soup turns silky without fancy tricks, and it still tastes rich even when you lighten it up. You can keep it chunky and rustic or blend it smooth. Either way, it delivers that stick-to-your-ribs vibe without being fussy.

I also love how budget-friendly it is. A bag of potatoes feeds a family, and you can customize the rest with whatever’s in the fridge. If your people like a little texture, crisp up some bacon or chorizo as a topper. If you want to keep it wholesome, lean on carrots, celery, and extra herbs. It all works.

When I’m feeling grilled-food cravings in summer, I’ll make this soup for lunch and then toss the extra spuds on the grill for dinner. If you want ideas, check out these easy grilled potatoes recipes I turn to when it’s too nice to stay indoors.

Bottom line: this bowl delivers comfort, flexibility, and that cozy homemade feel that never gets old.

How to Make Healthy Potato Soup

This is a lighter but still hearty version of classic potato soup. I use a mix of broth and milk, skip heavy cream most nights, and lean on onions, garlic, and herbs for flavor. You’ll still get that creamy spoonful, just a little friendlier for everyday eating. Here’s how I pull it together.

Ingredients

• 2 tablespoons butter or olive oil
• 1 large onion, diced
• 2 carrots, diced
• 2 celery ribs, diced
• 3 cloves garlic, minced
• 2 pounds potatoes, peeled and diced small (Yukon Gold or russet)
• 4 cups low-sodium chicken or vegetable broth
• 1 cup milk or half-and-half
• 1 teaspoon kosher salt, plus more to taste
• 1/2 teaspoon black pepper
• 1/2 teaspoon dried thyme or Italian seasoning
• 1 bay leaf
• Optional for creaminess: 1/2 cup plain Greek yogurt or sour cream
• Optional toppings: chopped green onion, shredded cheddar, crispy bacon, parsley

Directions

• Warm a heavy pot over medium heat. Add butter or oil. Sauté onion, carrots, and celery with a pinch of salt for 5 to 7 minutes until softened. Stir in garlic for 30 seconds.
• Add potatoes, broth, thyme, pepper, and bay leaf. Bring to a boil, then lower to a gentle simmer. Cover and cook 15 to 20 minutes until the potatoes are tender.
• Discard the bay leaf. For a creamy texture, use a potato masher to mash some of the potatoes right in the pot. For ultra-smooth soup, blend part of it with an immersion blender. Leave some chunks if you like that rustic feel.
• Pour in milk and stir. Warm gently for 2 to 3 minutes. Don’t let it boil after adding milk to prevent curdling.
• Taste and adjust salt. If you want extra richness, stir in Greek yogurt or sour cream off the heat. Top with green onion, cheese, bacon, or parsley.

Notes for success: try Yukon Gold for a naturally creamy finish, or russet if you want that fluffy, mashable texture. If your soup gets too thick, add a splash of warm broth or milk. If it’s thin, simmer a few extra minutes uncovered. For slow-cooker fans, you can adapt this method easily. Food safety tip: let leftovers cool on the counter for no more than 1 hour, then chill promptly in shallow containers. Reheat to steaming hot before serving.

Recipe Variations

Here’s where you make it yours. The base recipe is flexible, so you can play with flavors depending on what’s in your fridge or what your family loves.

Protein add-ins: Stir in chopped cooked bacon, leftover chicken, or browned turkey sausage. Browned Italian sausage turns this into a full meal with a little kick. If you like that vibe, you’ll also enjoy this comforting Italian sausage and potato soup.

Dairy-free and lighter options: Use olive oil instead of butter and swap the milk for unsweetened oat milk or almond milk. For creaminess without dairy, blend a cup of the soup with a handful of cooked cauliflower or a spoonful of cashew butter.

Loaded potato style: Top bowls with sharp cheddar, green onions, and crispy bacon. A dollop of Greek yogurt gives that sour-cream vibe with extra protein.

Veggie boosts: Stir in spinach or kale in the last few minutes. Toss in sweet corn for a little pop. Add a splash of lemon for brightness right before serving.

Slow-cooker path: Add all ingredients except milk and dairy to the slow cooker. Cook on low for 6 to 7 hours, mash, then stir in milk at the end. Keep it on warm while you set the table.

My neighbor tried this and sent a text that said, “My kids asked for seconds without bargaining. That never happens. Saving this recipe forever.”

How to Store Potato Soup

Let the soup cool slightly, then pack it into shallow containers for faster chilling. Store in the fridge for 3 to 4 days. Potato soup thickens in the fridge, so add a little water or broth while reheating to get that perfect spoonable texture. Reheat gently on the stove over medium-low heat, stirring often. Avoid boiling, especially if you used milk or yogurt.

Freezing tips: if you plan to freeze, make the soup without dairy, then add milk or yogurt after reheating. Freeze in labeled portions for up to 3 months. Thaw overnight in the fridge, then reheat slowly on the stove. Potato Soup Tips

• Cut potatoes small and even so they cook quickly and mash smoothly.
• Season as you go: a pinch of salt with the veggies, then adjust at the end.
• Use part mash, part chunks for the best texture. It feels creamy but still hearty.
• Add dairy off the heat so it stays silky and doesn’t curdle.
• Finish with freshness: a squeeze of lemon or a sprinkle of parsley brightens the bowl.
• Make it a meal: serve with a crisp salad or something crunchy. On weekends, I’ll bake a quick loaf of bread or throw a pan of crispy breakfast potatoes in the oven and call it a day.
• Adjust richness to match your mood. Milk for everyday, half-and-half for guests, or Greek yogurt for a protein boost.
• Keep it flexible: The Easy Hearty Homemade Potato approach is to work with what you have. Add carrots, skip celery, use thyme or Italian seasoning. It’s all welcome here.

Once you’ve made this a few times, it becomes second nature. The Easy Hearty Homemade Potato method is really about trusting your taste buds and keeping the steps simple. If it needs salt, add it. If it’s too thick, thin it. If it’s too thin, simmer a bit longer. You’ve got this.
