Griddle Cooking

Blackstone BBQ Chicken is my weeknight rescue when the clock is yelling dinner and my brain wants something simple and tasty. Maybe you’ve had those nights where you want real flavor without babysitting a grill forever. Same here. I’ve dialed in a routine that gets juicy chicken on the table fast, with a sticky BBQ finish and a few smart shortcuts. This is the kind of recipe that makes you feel like a hero with minimal fuss. And yes, it really does come together in about half an hour.

Why You’ll Love This Recipe

I love a recipe that doesn’t overcomplicate dinner. This one hits all the notes: quick prep, reliable cook time, and big flavor for minimal effort. The heat from the griddle gives a gorgeous sear while keeping the meat moist. A light oil rub and a sprinkle of salt do the heavy lifting, and the sauce goes on at the end so it doesn’t burn. If you want extra oomph, try a quick marinade ahead of time or even in the morning before work. This super-flexible approach turns out consistently juicy, family friendly chicken every time.

When I’m planning a cookout, I’ll sometimes pair the sauce with a tangy marinade like this balsamic chicken marinade and it’s always a winner. It layers flavor without adding time. If you’re looking for true set-it-and-forget-it ease, the beauty of this method is that you can season, sear, flip, and glaze with almost no downtime. It’s weeknight perfection. And if you want a name for what you’re making, it’s exactly this: Deliciously Grilled Blackstone BBQ Chicken in Just 30 Minutes!

Ingredients Needed for BBQ Chicken

The Chicken

• 2 pounds boneless, skinless chicken breasts or thighs, trimmed
• 1 to 2 tablespoons avocado or canola oil for rubbing
• 1 teaspoon kosher salt, plus more to taste
• 1/2 teaspoon black pepper
• 1/2 teaspoon smoked paprika or regular paprika
• Pinch of garlic powder

The Glaze

• 1/2 to 3/4 cup your favorite BBQ sauce
• 1 tablespoon honey or brown sugar for extra gloss, optional
• 1 teaspoon apple cider vinegar for brightness, optional

Nothing fancy here. Keep it simple and your chicken will shine. If using thick chicken breasts, I like to butterfly and pound them to an even 1/2 to 3/4 inch so they cook evenly and fast.

Substitution Tips

Thighs vs. breasts: Both work. Thighs are more forgiving and stay juicy even if you go a minute over. If you’re using breasts, just keep an eye on internal temp and you’ll be golden.

No Blackstone? Use a heavy cast iron pan or a stovetop griddle. Medium heat, same steps, same finish. If you prefer a lighter sauce, swap half the BBQ sauce for a splash of chicken broth to thin it out. Want a smoky kick? Add a pinch of chipotle powder or use a smoky BBQ sauce. For sweetness, a drizzle of honey or maple syrup does wonders.

Feeding picky eaters? Keep a side option like these crispy parmesan chicken tenders ready to go. They use similar pantry staples and everyone at the table stays happy. Planning a themed backyard spread? Pair tonight’s plate with something like easy chicken souvlaki with tzatziki on another night to keep things exciting without extra effort.

How to Make BBQ Chicken on Blackstone

Preheat and Prep

Preheat your Blackstone to medium heat around 375 to 400 degrees F for a few minutes. While it heats, pat the chicken dry with paper towels. Rub lightly with oil, then sprinkle on salt, pepper, paprika, and garlic powder. If you have time, let it sit for 10 minutes at room temp. That quick rest helps the seasoning stick and gives you a better sear.

Sear and Cook

Add a thin drizzle of oil to the hot griddle and place the chicken down. You should hear a gentle sizzle. Cook for about 4 to 6 minutes per side, depending on thickness. Try not to fuss with it. That stillness builds a nice crust that keeps the meat juicy.

Flip once the underside releases easily and has good color. If your chicken is thicker than 3/4 inch, use a steam dome or a large metal bowl to cover the pieces for the last few minutes. The trapped heat cooks the center faster without drying the surface.

Glaze and Rest

Mix BBQ sauce with a little honey and vinegar if you like it glossy and tangy. Brush it on the chicken during the last 2 minutes of cooking so it caramelizes without burning. Aim for an internal temperature of 165 degrees F. Pull the chicken off the griddle and rest it on a clean plate for 5 minutes so the juices settle. That last bit of patience keeps every bite tender.

That’s it. No drama, just Deliciously Grilled Blackstone BBQ Chicken in Just 30 Minutes! It’s one of those meals that makes you wonder why you ever worked harder for less flavor.

We made this on a Tuesday after soccer practice and it was the fastest, juiciest chicken we’ve had in ages. Even my sauce skeptic asked for seconds. The 30 minute timeline was spot on.

Serving Suggestions

Let’s keep the sides easy so dinner stays stress-free. I love to slice the chicken and fan it over something fresh and something cozy. Here are a few mix and match ideas:

• Griddled veggies like zucchini, peppers, or asparagus with a sprinkle of salt and lemon.
• A simple salad with crisp greens, cucumbers, and a light vinaigrette.
• Creamy slaw for crunch and contrast against the sticky BBQ glaze.
• Buttery corn on the cob or a quick pickled red onion for pop.
• For a perfect cookout plate, try these grilled potatoes; they pair like a dream with BBQ chicken.

Leftovers make amazing sandwiches. Slice the chicken, pile it on toasted buns, add extra sauce, and maybe a slice of sharp cheddar. Or go bowl style with rice, corn, and avocado. If you’re craving a full-on meal bowl experience another night, this street corn chicken rice bowl hits those same BBQ-friendly flavors in a different way.

Pro tip: Warm the sauce a little before brushing it on so it spreads evenly and clings to the chicken. If you love a smoky sweet finish, glaze twice and let it bubble for 30 seconds each time.

Common Questions

How do I keep the chicken from drying out?
Use medium heat, don’t overflip, and pull at 165 degrees F. Rest for 5 minutes. A quick oil rub and even thickness help a lot.

Can I use bone-in chicken?
Yes, but it will take longer. Sear on the griddle, then finish under a lid or in a 375 degree oven until it reaches 165 degrees F near the bone.

What if my BBQ sauce keeps burning?
Sauce in the last 2 minutes only. If your sauce is super sweet, thin it slightly with water or broth and keep the heat moderate.

Do I need a steam dome?
It helps for thicker pieces, but you can improvise with a large metal bowl. It traps heat and shortens the cook time without drying the chicken.

Can I prep this ahead?
Absolutely. Season and refrigerate up to 24 hours ahead. You can also marinate earlier in the day. Just pat dry before searing to get that nice crust.
