Greek Lemon Chicken Soup

Easy Avgolemono Soup — Greek Lemon Rice Chicken is my go to fix for those nights when you want something cozy but you are so not in the mood for a big cooking project. You know the feeling, you open the fridge, stare for a minute, and hope dinner just appears. This soup is bright, comforting, and somehow feels both light and filling at the same time. The lemon wakes everything up, the rice makes it hearty, and the chicken turns it into a real meal. If you have a pot, a whisk, and about 40 minutes, you can pull this off even on a weekday.

What is Avgolemono?

Avgolemono is a classic Greek combo of egg and lemon that’s used to thicken and brighten soups and sauces. In this soup, you take warm broth and slowly whisk it into beaten eggs and lemon juice, then stir it back into the pot. The result is a silky, creamy texture without adding any cream.

What I love most is that it tastes fancy, but the ingredient list is super normal. It’s basically chicken soup with a Greek twist. If you’ve ever made plain chicken and rice soup and thought, “It needs something,” this is that something.

Also, if you enjoy chicken soup styles in general, you might like this cozy copycat too: easy chicken wild rice soup Panera copycat. Different vibe, but same comforting energy.

How to Make Avgolemono Soup

I’ll walk you through it in plain language, because the only part that feels even slightly “technical” is the egg lemon step, and it’s honestly easy once you see the rhythm.

Ingredients you will need

• Chicken: cooked shredded chicken or rotisserie chicken works great
• Chicken broth: low sodium if you can, so you control the salt
• Rice: white rice is classic, jasmine or basmati both work
• Onion and celery: for that cozy soup base
• Garlic: optional, but I always add it
• Eggs: usually 2 to 3
• Lemon juice: fresh squeezed tastes best
• Salt and pepper
• Dill or parsley: totally optional, but really nice

Step by step directions

1) In a medium to large pot, cook your chopped onion and celery with a little olive oil. Just a few minutes until they soften.

2) Add garlic if using and stir for about 30 seconds, just until you smell it.

3) Pour in the chicken broth and bring it to a gentle boil.

4) Add the rice. Lower the heat and let it simmer until the rice is tender. For most white rice, that’s around 15 to 20 minutes.

5) Stir in the cooked chicken and let it warm through for a couple minutes.

6) Now the avgolemono moment. In a bowl, whisk the eggs until they look smooth. Whisk in the lemon juice.

7) Slowly ladle in hot broth from the pot while whisking the egg lemon mixture the whole time. Do this with 1 to 2 cups of broth. You’re basically warming it up so it doesn’t scramble.

8) Turn the heat down low. Pour the warmed egg lemon mixture back into the pot while stirring gently.

9) Keep it on low for a minute or two. Do not boil. Taste and adjust salt, pepper, and maybe a little extra lemon if you like it bright.

That’s it. You just made Easy Avgolemono Soup — Greek Lemon Rice Chicken and it’s going to smell like you really had your life together today.

If you like lemony one pot soups, I also make this on repeat: Mediterranean lemon chicken soup easy one pot. It’s a nice cousin to avgolemono when you want something even more hands off.

“I was nervous about the egg lemon part, but it turned out perfectly smooth. My whole family went back for seconds and my picky kid even asked for more broth.”

Two Important Tips for Making Avgolemono Soup

Tip 1: Temper the eggs slowly

This is the big one. The only way you end up with egg bits is if you rush the warming step. Keep whisking and add the hot broth slowly, like a thin stream, not a dump. Think calm thoughts. You’ve got this.

Tip 2: Never let it boil after adding eggs

Once the egg lemon mixture goes into the pot, keep the heat low. You want it hot, steamy, and cozy, but not bubbling. A boil can break the silky texture and turn it grainy.

One more small thing I learned the hard way: if your rice keeps soaking up broth and the soup gets too thick in the fridge, just add a splash of broth when reheating. It comes right back.

Variations and Modifications

The classic version is pretty simple, but you can absolutely make it fit your kitchen and your mood.

Swap the rice: If you only have orzo, you can use it. It makes the soup feel extra cozy. Brown rice works too, but it takes longer and drinks more broth.

Use leftover chicken: This recipe loves leftovers. Roast chicken, grilled chicken, even that container of shredded chicken you meant to use yesterday.

Make it more lemony: Some people like avgolemono to be boldly lemony. Add extra lemon at the end, a teaspoon at a time, tasting as you go.

Add greens: A couple handfuls of spinach stirred in at the end is honestly delicious. It wilts fast and makes you feel like you made a very responsible dinner.

Gluten free: It’s naturally gluten free if you stick with rice and check your broth label.

What to Serve Along?

This soup is filling, but I usually serve something small on the side so it feels like a full dinner without extra effort.

• Warm pita or crusty bread for dipping
• A simple Greek style salad with cucumber and feta
• Roasted veggies like zucchini or broccoli
• Olives and a little plate of feta if you want snacky dinner vibes

Common Questions

Can I make Easy Avgolemono Soup — Greek Lemon Rice Chicken ahead of time?
Yes, but keep in mind the rice will absorb broth as it sits. Make it, chill it, and add extra broth when reheating. Heat gently and do not boil.

What if my soup looks a little too thick?
Just stir in more warm broth until it’s the texture you like. This happens a lot after it’s been in the fridge overnight.

Can I freeze avgolemono soup?
I don’t really recommend freezing the finished soup because egg thickened soups can change texture after thawing. If you want freezer friendly, freeze the soup base before adding the egg lemon mixture, then finish it fresh later.

Do I have to use fresh lemon juice?
Fresh is best and gives that clean, bright flavor. Bottled works in a pinch, but start with less since some bottled juices taste sharper.

How do I fix it if the eggs scrambled?
First, don’t panic. Strain the soup through a fine mesh strainer to remove bits, then keep it on low and add a splash of broth. The flavor will still be good.
