Garlic Butter Beef

Crockpot Garlic Butter Beef Bites & Potatoes is my answer to those nights when I want real comfort food but I also do not want to stand at the stove babysitting dinner. You know the vibe, you are tired, the kitchen is a mess from earlier, and everyone is asking what is for dinner. This is the kind of meal that makes the house smell like you tried really hard, even if you just tossed everything in and walked away. It comes out rich, garlicky, and cozy, with tender beef and soft potatoes that soak up all that buttery goodness. If you have a slow cooker and about ten minutes of energy, you are set.

What We Love About This Recipe

First, it is the flavor. The combo of garlic, butter, and beef juices makes its own little sauce, and the potatoes basically drink it in. Second, it is forgiving. If your day runs long, it is not like a pasta that turns to mush the second you look away.

I also love how this hits that sweet spot between “weeknight easy” and “weekend comfort.” It feels hearty enough for company, but simple enough for a regular Tuesday. If you are on a garlic butter kick like I am, you might also like these savory garlic butter beef bites ready in just 20 minutes for a faster option when the slow cooker is not happening.

And since I am clearly the type who puts potatoes in everything, I will admit I have made a similar chicken version too. This garlic parmesan crockpot chicken and potatoes recipe is a nice switch when you want the same cozy feel but lighter than steak.

One more thing I appreciate is how family friendly it is. No spicy heat, no unusual ingredients, just familiar flavors done really well. I have served this to picky eaters and they basically turn into little food critics saying things like “the potatoes are the best part.”

Ingredient Notes

Let’s talk ingredients in a practical way, because the details matter with slow cooker meals. This is not fussy, but a couple smart choices make it extra good.

What you will need

• Beef: Stew meat works, but I prefer sirloin or chuck roast cut into bite size chunks. Chuck gets super tender, sirloin stays a bit meatier.
• Baby potatoes: Yukon gold or red potatoes are perfect. If they are bigger, just cut them into halves or quarters so they cook evenly.
• Butter: Real butter gives the best flavor. I usually do unsalted and add salt myself.
• Garlic: Fresh minced garlic is best. Jar garlic works in a pinch, but fresh tastes brighter.
• Seasoning: Salt, pepper, onion powder, and Italian seasoning are my basics. Paprika is nice too for color.
• Beef broth: Not a lot, just enough to help things stay juicy and create some sauce.
• Cornstarch slurry (optional): If you want a thicker sauce at the end.

A quick note about potatoes: if you cut them too small, they can get overly soft by the time the beef is tender. Aim for chunky pieces. And for the beef, try to keep the pieces similar in size so you do not end up with a few dry bits mixed in.

How to Make Slow Cooker Garlic Butter Beef Bites

This is the part where you get to feel like you are barely cooking, but the result tastes like you did more than you actually did. I make Crockpot Garlic Butter Beef Bites & Potatoes when I want dinner to handle itself.

Step by step (with the little tips that matter)

1. Prep the beef and potatoes. Pat the beef dry with paper towels if you can. It helps the seasoning stick. Halve or quarter the potatoes depending on size.

2. Season everything. Toss beef and potatoes with salt, pepper, onion powder, and Italian seasoning. If you like a little smoky flavor, add paprika.

3. Add to the crockpot. Put the potatoes on the bottom, beef on top. This helps the potatoes cook in all the drippings.

4. Mix the garlic butter. Melt butter and stir in the garlic. Pour it over everything. Add a small splash of beef broth around the edges.

5. Cook low and slow. Cook on LOW for about 6 to 8 hours or HIGH for about 3 to 4 hours. Times vary by slow cooker, so start checking when the beef feels fork tender.

6. Optional sauce thickening. If you want a thicker sauce, stir in a cornstarch slurry during the last 20 minutes and let it cook a bit longer.

I know some people like to sear the beef first. You can, and it adds flavor, but honestly I usually skip it on busy days. If you are craving that browned taste without extra work, add a tiny bit more seasoning and do not skimp on the garlic butter.

This is also a meal that pairs well with simple sides. I love a green salad, steamed green beans, or even just some buttered peas. If you want another cozy potato moment for a different night, this ground beef and gravy over mashed potatoes is pure comfort food energy.

“I made this on a cold Sunday and my whole family kept sneaking bites straight from the crockpot. The beef was so tender and the potatoes tasted like they were roasted in garlic butter. This one is going into the regular rotation.”

Tips & Variations

Once you make Crockpot Garlic Butter Beef Bites & Potatoes the classic way, it is really easy to tweak it based on what you have or what you are craving.

• Add veggies: Mushrooms, carrots, or green beans work well. Add hearty veggies at the start. Add delicate ones later if you can.
• Make it a little spicy: A pinch of red pepper flakes or a dash of hot sauce wakes it up.
• Try herbs at the end: Fresh parsley is my favorite. Chives are also great.
• Cheesy finish: Sprinkle a little parmesan on top right before serving.
• Richer sauce: Stir in a spoonful of cream cheese at the end for a creamy garlic butter vibe.

If you like the garlic butter thing but want to change up the protein, I have had great luck with chicken thighs too. This lemon garlic butter chicken thighs recipe with green beans is a super tasty option when you want something bright and still buttery.

One small tip I learned the hard way: do not add too much liquid at the start. The beef and potatoes release moisture as they cook, and you can end up with more broth than you wanted. Start light, then adjust at the end if needed.

How to Store Leftover Crockpot Steak Bites

Leftovers of Crockpot Garlic Butter Beef Bites & Potatoes might be my favorite part, because the flavors settle in and get even better the next day.

Storage and reheating

In the fridge: Store in an airtight container for up to 3 to 4 days. Try to keep the beef and potatoes submerged in a little of the sauce so they stay moist.

In the freezer: You can freeze it, but potatoes can change texture a bit after freezing. If you do freeze, use freezer safe containers and eat within 2 months for best quality.

To reheat: Warm it in a skillet with a small splash of broth, or microwave in short bursts and stir in between. If the sauce thickened too much, add a touch of water or broth.

My favorite leftover move is turning it into a quick bowl meal. I heat it up, add a handful of spinach to wilt, and call it lunch. Also, if your potatoes got a little soft, crisping them in a pan makes them feel brand new again.

Common Questions

Do I have to sear the beef first?

Nope. Searing adds extra flavor, but Crockpot Garlic Butter Beef Bites & Potatoes is still delicious without it. If you have time, do it. If you do not, do not stress.

What cut of beef is best for this?

Chuck roast is great for tenderness. Sirloin works if you want a leaner bite. Stew meat is convenient, but quality varies, so check that it looks fresh and well trimmed.

How do I keep the potatoes from getting mushy?

Keep the pieces larger and try not to overcook. If your slow cooker runs hot, start checking earlier. Baby potatoes halved are usually perfect.

Can I add more garlic without ruining it?

Yes, if you love garlic, go for it. I often add a little extra at the end too, just a tiny bit of fresh minced garlic stirred into the hot sauce for a brighter punch.

What can I serve with it?

A simple salad, roasted broccoli, or green beans are great. If you want bread, warm rolls are perfect for soaking up the garlic butter sauce.
