Egg Cheese Taquitos

Easy Breakfast Taquitos — Egg Cheese Rolled are my go to solution for those mornings when everyone’s hungry, the coffee hasn’t kicked in, and I need something warm that doesn’t take a whole production. You get that cozy combo of fluffy eggs and melty cheese, all wrapped up in a tortilla you can hold in one hand. I started making these when I realized cereal was not cutting it for my family on busy weekdays. They’re fast, flexible, and honestly kind of fun to make. If you’ve ever stared into the fridge hoping breakfast would magically appear, this recipe is for you.

What You’ll Love About Breakfast Taquitos

First, let’s talk about why these disappear so quickly. Breakfast taquitos hit that sweet spot between comforting and practical. They feel like a treat, but they’re actually super simple.

Here’s what makes them a repeat recipe at my place:

• Quick cooking time: you can get a batch done in about 20 minutes.
• Easy to customize: add meat, veggies, different cheeses, whatever you have.
• Freezer friendly: future you will be very grateful.
• Kid and adult approved: they’re basically breakfast you can dip.

I also love that they’re not messy like some breakfast sandwiches can be. Everything stays tucked inside. If you’re into other easy egg breakfasts, you might also like these easy egg muffins meal prep breakfast cups because they give the same grab and go vibe.

My basic flavor combo is eggs, cheddar, and a little pinch of salt and pepper. But sometimes I’ll toss in leftover cooked bacon or sausage, or even a small handful of spinach if I’m trying to feel like I have my life together.

One more thing, texture matters. I like baking or pan crisping them so the tortillas get a little golden and crunchy on the outside. That contrast with the soft eggs inside is the whole point for me.

Tips for Making Taquitos

Let’s make this easy and stress free. You do not need fancy tools, but you do need a couple simple steps that keep the taquitos from cracking or turning soggy.

Ingredients and what you will need

Here’s my usual lineup. This makes about 8 small taquitos, depending on tortilla size.

• 8 small flour or corn tortillas
• 6 large eggs
• 1 to 1 and 1 2 cups shredded cheese like cheddar, Monterey Jack, or a blend
• 1 tablespoon butter or oil for the pan
• Salt and pepper
• Optional add ins: cooked sausage, ham, bacon, diced bell pepper, green onions

And you’ll want: a nonstick skillet, a spatula, and a baking sheet if you’re baking them.

My step by step method

1) Warm your tortillas first. This is a big deal if you don’t want cracked rolls. I microwave them for about 20 seconds under a damp paper towel, or warm them one by one in a dry skillet.

2) Scramble the eggs gently. I melt butter in the pan, whisk eggs with a pinch of salt and pepper, then cook on medium low. Pull them off the heat when they’re still a little soft. They’ll finish cooking later, and you want them tender, not dry.

3) Fill and roll. Add a small spoonful of egg down the center of each tortilla, sprinkle cheese on top, then roll snugly. Do not overfill, that’s when the cheese leaks and things get chaotic.

4) Crisp them up. You’ve got options:

Baked: place seam side down on a baking sheet. Bake at 425 F for about 8 to 12 minutes, until crisp and lightly golden.

Skillet: heat a thin layer of oil and cook seam side down first, then rotate until browned all around.

One more practical tip: if you’re using corn tortillas, warm them well and roll gently. They taste amazing but crack easier than flour tortillas. If corn keeps fighting you, just use flour. No shame.

Also, I promised credibility, so here’s my honest rule: do not cook your eggs to death. Dry eggs make dry taquitos, and nobody’s excited about that.

“I made these on a Sunday and froze half. My kids asked for them again before school, and I didn’t even have to argue about breakfast. Total win.”

Storage Instructions

This is where breakfast taquitos really shine. They’re one of the best make ahead breakfasts I know, and they reheat like a champ if you do it right.

Fridge and freezer tips

In the fridge: Let them cool, then store in an airtight container for up to 4 days. If you stack them, put a paper towel between layers so they don’t get too soft.

In the freezer: Wrap each taquito in foil or parchment, then place in a freezer bag. They keep well for about 2 months. Write the date on the bag because time moves differently in the freezer and suddenly it’s three months later.

Best reheating method: I like the oven or air fryer because it brings the crisp back.

• Air fryer: 350 F for 6 to 9 minutes
• Oven: 400 F for 10 to 14 minutes
• Microwave: works in a pinch, but they’ll be softer. If you microwave, finish in a hot pan for 1 minute per side if you can.

What to Serve with Breakfast Taquitos

These are pretty complete on their own, but adding one or two simple sides makes it feel like a real breakfast plate, even if you’re eating it in the car. I’m not judging. I’ve been there.

Here are my favorite pairings:

• Salsa or pico de gallo for a fresh bite
• Sour cream or plain Greek yogurt with a pinch of salt
• Guacamole or sliced avocado
• Fresh fruit like oranges, berries, or melon
• A simple side of roasted potatoes if it’s a slow morning

When I’m in a toast mood, I’ll do something playful like easy egg in a hole buttery toast breakfast on the side for the kids and taquitos for the adults. It’s a little breakfast mix and match situation.

And if you want to keep things a bit lighter, serve them with crunchy veggies and a dip. It sounds odd, but it works, especially if you’ve added bacon and cheese and you want something fresh next to it.

Most importantly, don’t overthink the sides. The taquitos are the star.

Common Questions

Can I make breakfast taquitos ahead of time?
Yes, and they’re great for it. Cook, cool, store in the fridge up to 4 days or freeze up to 2 months, then reheat in the oven or air fryer for the best texture.

What tortillas are best, flour or corn?
Flour tortillas roll easier and stay flexible. Corn tortillas taste amazing but need warming so they don’t crack. Use what you like, just warm them first.

How do I keep them from getting soggy?
Do not overfill, and do not wrap them up while they’re steaming hot. Let them cool a bit, then store. Reheat in an oven or air fryer to bring back the crisp.

Can I add meat and vegetables?
Absolutely. Just make sure add ins are cooked and not watery. If you add peppers or mushrooms, sauté them first so they don’t leak moisture into the tortilla.

How much filling should I use?
Less than you think. A couple spoonfuls of egg plus a pinch of cheese is plenty. Overfilling makes rolling harder and causes cheese to escape.
