Cookie Press Recipe

chocolate spritz cookies are one of those lifesaver recipes for when you want something homemade and cute, but you do not want a big baking project. I have had so many days where I needed a quick cookie for a party plate, a school thing, or just because it is Tuesday and I want chocolate. These come together fast, they bake fast, and they look like you tried really hard. If you have a cookie press hanging out in a drawer, this is your sign to use it. And if you do not have one yet, I will help you pick a good one.

What Are Chocolate Spritz Cookies?

Spritz cookies are buttery little cookies that get pushed through a cookie press into fun shapes like stars, trees, wreaths, and swirls. The word spritz comes from a German word that basically means to squirt, which is exactly what happens when you press the dough out.

For chocolate spritz cookies, I take that classic buttery dough and add cocoa powder plus a little extra vanilla. The result is a cookie that tastes like a rich chocolate shortbread vibe, but lighter and snappier. They are not super sweet, which is why they pair so well with sprinkles, melted chocolate, and a mug of coffee.

They are also amazing on cookie platters because they are tidy, pretty, and they stack without getting messy. If you like cookies that look festive without a ton of effort, you are going to love them.

Quick ingredient list for my go to batch:

• Unsalted butter, softened (this matters for pressing)
• Granulated sugar
• Egg
• Vanilla extract
• All purpose flour
• Unsweetened cocoa powder
• Salt
• Optional: a tiny splash of milk if your dough feels too stiff

And if you are in a cookie mood and want something with big bakery energy, I also have a soft spot for brown butter chocolate chip cookies. Totally different vibe, but so worth it.

What Is the Difference Between Spritz Cookies and Shortbread?

They are cousins, but not twins. Shortbread is usually a little thicker and more crumbly, and it is typically made with just butter, sugar, and flour. Spritz cookies usually include an egg, and that changes everything. The egg makes the dough smoother and more flexible, so it can go through a press and hold detailed shapes.

Here is how I explain it to friends:

Spritz cookies: lighter bite, smoother dough, designed for a press, usually a bit snappier on the edges.

Shortbread: denser and more sandy, usually cut into wedges or rectangles, and it does not need fancy equipment.

Chocolate spritz cookies have that buttery base like shortbread, but they feel a little airier and more delicate, which makes them dangerously easy to snack on while you are “just cleaning up the kitchen.”

Tips for Perfect Chocolate Spritz Cookies Every Time

Okay, this is the part I wish someone had told me the first time I tried spritz cookies and ended up with a tray of sad blobs. It is not hard, but the small details matter.

My best tips:

First, make sure your butter is softened, not melted. If the butter is too warm, the dough gets greasy and your shapes can spread.

Second, do not chill the dough. This is different from most cookie recipes. Cold dough does not press well and it can make the cookies break mid press.

Third, skip parchment paper. I know, it feels wrong. But spritz dough needs something to grip. Use an ungreased, unlined baking sheet. If your pan is nonstick, that is fine, just keep it dry.

Fourth, keep your pressure steady and count in your head. I do a consistent press rhythm so the cookies come out the same size.

And last, do not overbake. They can look a little soft at first. You are looking for a set top and slightly firmer edges. Overbaking makes them dry fast.

These little tricks make chocolate spritz cookies come out crisp, defined, and honestly kind of addictive.

What Is the Best Cookie Press for Spritz Cookies?

I have tried a couple, and here is the real talk: you want one that is comfortable in your hands and has sturdy discs that do not warp. A press does not need to be fancy, but it does need to feel solid.

What I look for:

• Easy trigger or twist action that does not require superhero grip strength.
• Clear barrel so you can see how much dough is left.
• Multiple discs with classic shapes, especially stars and wreaths.
• Parts that come apart easily for washing, because dried cookie dough is no joke.

If you bake a lot during the holidays, it is worth buying a decent one. It is one of those tools you end up using every year without even thinking about it.

Why Are My Spritz Cookies Not Holding Their Shape?

This is the biggest complaint I hear, and it usually comes down to one of a few common issues. I have had all of them happen at least once, especially when I was rushing.

Here are the usual suspects:

Your butter is too warm. If your kitchen is hot, your dough can get soft fast. Try mixing, then pressing right away. If it feels greasy, pop the dough in the fridge for just 10 minutes, not longer.

• You are using parchment paper. The dough slides instead of sticking, so it twists and smears. Use a bare baking sheet.
• Your flour measurement is off. Too much flour makes the dough crumbly and hard to press. Too little flour makes it too soft and spreadable. Spoon and level the flour if you can.
• You are overmixing. Once the flour goes in, mix just until it comes together. Overmixing can change the texture.
• Your baking sheet is warm. If you are reusing the same sheet, let it cool before you press the next batch.

If you adjust these, your chocolate spritz cookies should come out with clean edges and cute little details.

How to Decorate Chocolate Spritz Cookies

This is the fun part, and it is also how you can make one batch look like three different cookie varieties on a platter.

My favorite easy decorating ideas:

• Sprinkles: Add them right after pressing the shapes, before baking. They stick best then.
• Coarse sugar: Gives a pretty sparkle and a tiny crunch.
• Chocolate drizzle: Melt chocolate chips with a tiny bit of oil, then drizzle with a spoon.
• Sandwich style: Pipe a little frosting or ganache between two cookies. This makes them feel extra special.

Also, if you are putting together a holiday cookie box, these pair really well with something chewy and chunky, like easy chocolate chip cannoli cookies. The contrast is so good.

Can You Freeze Chocolate Spritz Cookies?

Yes, and I am a huge fan of freezing them because it makes the holidays feel less chaotic.

How I freeze them:

Let the cookies cool completely.

Place them in a freezer safe container with layers of parchment or wax paper between them. It helps keep the shapes perfect.

Freeze for up to 2 months for best flavor and texture.

To serve, let them thaw at room temperature for about 30 minutes. If you want to add drizzle or dip, do it after thawing so the chocolate sets nicely.

You can also freeze the dough, but pressing from frozen dough is tough. If you do freeze dough, thaw it in the fridge overnight, then bring it to a soft, pressable texture on the counter for a bit.

Variations White Chocolate Dip and Peppermint Style

You asked for easy, and these are the two variations I make most often because they look adorable and taste like the holidays.

White chocolate dip: Melt white chocolate, dip half of each baked cookie, then lay them on a sheet to set. Add sprinkles right away so they stick. This turns plain chocolate spritz cookies into fancy bakery looking cookies in about ten minutes.

Peppermint style: Add 1 quarter teaspoon peppermint extract to the dough along with the vanilla. Then dip in white chocolate and sprinkle crushed peppermint candies on top. They smell like winter the second you open the container.

Just a quick note: peppermint extract is strong. Start small. You can always add a tiny bit more next time.

I made these for our cookie swap and people kept asking where I bought them. The shapes were perfect and they tasted like brownie butter cookies in the best way.

Frequently Asked Questions About Chocolate Spritz Cookies

Do I need a cookie press, or can I pipe the dough?

A cookie press is the easiest way to get that classic look. You can pipe with a sturdy piping bag and a large star tip, but the shapes will be a little looser. The taste will still be great.

Can I make the dough ahead of time?

You can, but it is best used the same day. If you refrigerate it, expect it to be too firm. Let it sit out until soft again, then stir briefly to bring it back together.

Why are my cookies sticking to the press?

This usually happens when the dough is too warm or too soft. Try adding 1 to 2 tablespoons of flour, or chilling the dough for 10 minutes.

How do I know when they are done baking?

They should look set on top and not shiny, with slightly darker edges. They do not need to get very dark overall.

Can I use Dutch process cocoa?

Yes. Dutch process cocoa gives a deeper chocolate flavor and darker color. Just make sure it is unsweetened.

More Easy Christmas Cookie Recipes

If you are building a holiday baking list, I always suggest mixing textures and flavors so your cookie tray feels exciting. Along with chocolate spritz cookies, I like adding one chewy cookie, one crunchy cookie, and one fun themed cookie.

If you want a cute seasonal option, you might love chocolate chip cookies for Easter. Yes, they are technically Easter, but the idea of decorating cookies with festive colors totally works for Christmas too.

Also, do not forget the classics. A good chocolate chip cookie never gets old, especially when you are sharing with neighbors or packing boxes for friends.

Ready to Bake a Batch?

If you take anything from this post, let it be this: keep the butter soft, use an unlined baking sheet, and do not overbake.
