Cheese Spread

Easy Pimento Cheese — Southern Spread Dip is the kind of recipe I lean on when people are coming over and I do not want to fuss. You know that moment when you promised snacks, the doorbell is in 20 minutes, and your fridge looks like random odds and ends? This dip saves the day. It is creamy, a little tangy, cheesy in the best way, and it instantly feels like a Southern comfort food hug. I also love it because you can serve it a dozen ways without making a second dish.

What is Pimento Cheese?

Pimento cheese is a classic Southern spread made mostly from shredded cheese, mayo, and pimentos, which are those little red peppers that come chopped in a jar. If you have ever had it at a church picnic, a baby shower, or tucked into a sandwich at a small cafe, you already know the vibe. It is rich, salty, and a little bright from the peppers.

I grew up seeing it on crackers next to sweet tea, and now I keep it in my back pocket for game days and lazy weekends. Think of it as a friendlier, more spreadable cheese dip that still feels homemade. And yes, Easy Pimento Cheese — Southern Spread Dip can be as simple or as fancy as you want it to be.

If you are building a full snack table, it pairs perfectly with other crowd dips. I love something spicy next to it like easy buffalo chicken dip with cream cheese so people can bounce between flavors.

How to Make Pimento Cheese Dip

This is the part where I tell you not to overthink it. The best pimento cheese is the one you actually make. You can stir it together in one bowl, and it is ready right away, but it gets even better after a little fridge time.

What you will need

• Sharp cheddar cheese, freshly shredded if you can
• Mayonnaise
• Jarred pimentos, drained well
• Cream cheese, softened (optional but makes it extra smooth)
• Garlic powder or a tiny bit of grated garlic
• Onion powder (optional)
• Black pepper
• A pinch of cayenne or hot sauce if you like heat
• Salt only if needed (cheddar can be salty)

Quick directions

• Shred your cheddar and set it aside.
• In a bowl, stir together mayo and softened cream cheese until smooth.
• Fold in the shredded cheddar and drained pimentos.
• Season with garlic powder, pepper, and a little cayenne or hot sauce.
• Taste and adjust. Then chill 30 minutes if you have time.

I usually serve Easy Pimento Cheese — Southern Spread Dip with crackers, pretzel thins, celery sticks, or toasted baguette slices. If we are doing a full comfort-food night, I will add something hearty like easy Southern baked macaroni and cheese and call it a proper feast.

“I made this for a last minute get together and the bowl was scraped clean. Two people asked me for the recipe before halftime.”

Recipe Tips

These little tips are what make the difference between good and wow, why is this so addictive?

Small tweaks that help a lot

Shred your own cheese if you can. Bagged shredded cheese works, but it has anti-caking stuff that can make the texture a little powdery. Fresh shredded melts into the mixture better and tastes sharper.

Drain the pimentos really well. Extra liquid can make the spread runny. I press them lightly with a paper towel.

Go easy on the mayo at first. You can always add a spoonful more, but you cannot take it out once it is too loose. I like it thick enough to mound on a cracker.

Chill time is your friend. If you can give it 30 minutes, the flavors settle down and it tastes more balanced.

Heat level is personal. A pinch of cayenne adds warmth without screaming spicy. If you want it bolder, do hot sauce or a spoon of diced jalapenos.

For parties, I like to set this out next to something meaty and hot like easy crack dip with hot sausage and cream cheese. People will hover around the table and keep dipping, which is honestly the goal.

How to Store Pimento Cheese

Easy Pimento Cheese — Southern Spread Dip stores really well, which is another reason I make it often. Put it in an airtight container and keep it in the fridge.

Most of the time, it is best within 4 to 5 days. If your household is anything like mine, it will not last that long. Give it a quick stir before serving because it can firm up a bit as it chills.

I do not recommend freezing it. Mayo and cheese can separate after thawing and the texture gets weird and watery. If you want to prep ahead for a party, make it the day before and you will be golden.

If you are planning a whole comfort spread for guests, pimento cheese is an easy starter while something else bakes. I have totally done that with easy baked mac and cheese Southern stovetop style bubbling away in the oven.

Substitutions & Swaps

This recipe is flexible, and you should feel free to make it your own. Here are a few swaps I have tried when I was low on ingredients or just wanted a different vibe.

Cheese: Sharp cheddar is the classic, but you can do a mix. Pepper jack adds heat. Smoked cheddar gives it a deeper flavor. A little Monterey Jack makes it extra creamy.

Mayo: Use your favorite brand. If you do not love mayo, you can do half mayo and half Greek yogurt, but it will taste a little tangier and lighter.

Cream cheese: Optional, but it makes the dip thicker and smoother. If you skip it, just use a little less mayo to keep the texture spreadable, not runny.

Pimentos: If you cannot find them, roasted red peppers chopped small work great. Just pat them dry first.

Add-ins: A spoon of relish for a sweet tang, chopped green onions, or a little paprika on top for color. Sometimes I add a few dashes of Worcestershire for a savory note.

If you are building a snack board with a few dips, something crunchy and fancy feeling like easy million dollar dip with cream cheese and pecans is a fun match next to the creamy pimento.

Common Questions

Can I make it ahead of time?
Yes, and you should if you can. Easy Pimento Cheese — Southern Spread Dip tastes even better after it sits in the fridge for a few hours.

How do I keep it from getting runny?
Drain the pimentos well and do not add too much mayo at once. If it still gets loose, stir in a bit more shredded cheddar.

What is the best way to serve it?
Crackers are the classic, but it is also great with celery, pretzels, or spread on a sandwich. I love it on toast with tomato slices.

Can I make it spicy?
Absolutely. Add cayenne, hot sauce, diced jalapenos, or use pepper jack in the cheese mix.

Do I have to use cream cheese?
Nope. It just makes the texture extra smooth. Without it, you will have more of a traditional spread with a little more texture from the cheddar.
