Antipasto Salad

Easy Antipasto Salad Recipe is my go to answer for those days when everyone is hungry, I do not want to cook, and I still want something that feels a little special. You know the vibe, it is last minute guests, a busy weeknight, or you are just standing in front of the fridge hoping dinner will magically happen. This salad is salty, crunchy, juicy, and honestly kind of addictive. It also looks like you tried way harder than you did. If you have a cutting board and about 15 minutes, you are in business.

A Lighter Take on Antipasto Salad

Traditional antipasto plates can get heavy fast, mostly because it is easy to pile on extra meats and cheese. I still love those flavors, but when I am making this for lunch or as a side for dinner, I like a fresher, lighter balance. That means more crisp veggies, a punchy homemade dressing, and just enough of the deli goodies to keep it exciting.

My little trick is to think of it like a salad first, and an appetizer board second. So we start with greens and crunchy vegetables, then sprinkle in the fun stuff like salami, mozzarella, and olives. You get the same Italian deli style feel, but it does not leave you needing a nap.

If you are in a pasta salad mood instead, my other favorite is this easy antipasto pasta salad Italian deli style. It is basically this salad’s heartier cousin and it is perfect for picnics.

One more thing, I do not drown the salad in dressing. I start with a little, toss, taste, then add more if it needs it. It keeps everything bright and not soggy.

How to Make Antipasto Salad

This is the part I love because it is mostly chopping and tossing. No oven. No stovetop. No complicated steps. I make it when I want dinner to feel like a snacky spread, but still count as an actual meal.

What you will need

• Romaine or a spring mix, about 6 to 8 cups
• Cherry tomatoes, halved
• Cucumber, sliced or chopped
• Red onion, thinly sliced
• Roasted red peppers, sliced
• Olives, I like a mix of black and green
• Salami or pepperoni, chopped
• Fresh mozzarella pearls or cubed mozzarella
• Optional but great: artichoke hearts, pepperoncini, chickpeas

Quick dressing (my favorite way)

In a small jar, add:

• 1 third cup olive oil
• 3 tablespoons red wine vinegar
• 1 teaspoon Dijon mustard
• 1 small clove garlic, grated or minced
• 1 teaspoon Italian seasoning
• Salt and black pepper to taste

Put the lid on and shake like you mean it. Taste it. If you want it tangier, add a splash more vinegar. If it feels sharp, add a tiny drizzle of honey or a pinch of sugar.

Putting it all together

Grab your biggest bowl. Add the greens first, then layer on the tomatoes, cucumber, onion, peppers, olives, and the meats and cheese. Drizzle on a little dressing and toss. Add more dressing if needed, then finish with a bit of extra black pepper and a sprinkle of dried oregano if you like.

This is also where I sometimes add a handful of croutons if I want more crunch. Not traditional, but so good.

On summer nights, I love pairing this with something sweet and fresh like this easy grilled peach salad summer burrata recipe. The flavors play really well together, especially if you are serving guests.

Antipasto Salad Tips

I have made this salad so many times that I have learned a few things the hard way, like how red onion can take over the whole bowl if you are not careful. These tips keep your Easy Antipasto Salad Recipe tasting balanced and looking fresh.

Tip 1: Tame the onion. If your red onion is super sharp, soak the slices in cold water for 10 minutes, then drain. It takes away that harsh bite.

Tip 2: Dry your greens. If your lettuce is wet, the dressing slides off and pools at the bottom. Even a quick pat with paper towels helps.

Tip 3: Cut everything bite sized. Antipasto salad is better when every forkful has a little of everything. Big chunks make it hard to eat and harder to toss.

Tip 4: Use good jarred items. Roasted red peppers, artichokes, and pepperoncini are doing a lot of flavor work here. If you have a brand you like, stick with it.

Tip 5: Add cheese last if you are tossing hard. Mozzarella can break up if you toss too aggressively. I usually toss the veggies first, then fold in the cheese and meats gently.

“I made this for a family get together and the bowl was empty before I even sat down. Everyone asked for the dressing recipe. It tasted like something from an Italian deli.”

Also, if you want a fun little finishing touch after dinner, I am obsessed with this cold foam recipe easy 3 ingredient coffee topping. It is a simple treat that feels fancy with basically no effort.

What to Serve with Antipasto Salad

This salad can be a full meal, especially if you go a little heavier on the protein. But it also shines as a side dish for parties, potlucks, or holiday spreads. If I am serving it for dinner, I like to keep the rest easy and cozy.

Here are some things that work really well:

Simple mains: grilled chicken, baked salmon, rotisserie chicken, or even a quick panini.

Carb friends: crusty bread, garlic bread, focaccia, or toasted pita.

Soup pairing: tomato soup, minestrone, or a light broth based soup.

Party style: put out a big bowl of this salad plus chips, dips, and fruit, and let people graze.

And if you are already doing a summery spread, I will mention it again because I truly love it: the easy grilled peach salad summer burrata recipe is such a good partner on the table. Salty and sweet together just works.

Can You Make Antipasto Salad Ahead?

Yes, and it is one of the reasons I keep coming back to this Easy Antipasto Salad Recipe. The key is keeping the wet stuff away from the greens until the last minute.

Here is how I do it when I want to prep ahead:

Up to 2 days ahead: chop the veggies (except tomatoes if yours get mushy), slice the meats, and store everything in separate containers. Mix the dressing and keep it in a jar in the fridge.

Day of serving: wash and dry the greens, then assemble the salad in a big bowl. Add tomatoes and mozzarella right before serving if you want the freshest texture.

Right before eating: toss with dressing. If it sits dressed too long, the lettuce loses that crisp bite.

If you have leftovers, store them in an airtight container. They will still taste good the next day, but the greens will soften. Sometimes I revive leftovers by adding a handful of fresh romaine and a tiny splash of vinegar.

Common Questions

Can I make this vegetarian?
Absolutely. Skip the salami and pepperoni and add more chickpeas, marinated artichokes, or extra mozzarella. It is still super satisfying.

What meats work best?
Salami is the classic, but pepperoni, prosciutto, or even deli ham can work. Just keep the pieces small so they mix well.

Is this salad gluten free?
It can be. The salad itself is usually gluten free, but check labels on deli meats, jarred items, and seasoning mixes. Skip croutons unless they are gluten free.

How do I keep it from getting too salty?
Go easy on olives and pepperoncini at first, then taste. Also, use a mild mozzarella and add more veggies and greens to balance it out.

Can I use bottled dressing?
Yes, use what makes your life easier. A bottled Italian dressing works fine, but the quick homemade one tastes fresher and takes about a minute.
