Ingredients
  

Vegetables
  • 1 small onion, chopped
  • 2 to 4 cloves garlic, minced
Tomato Base
  • 1 can canned whole tomatoes Fresh tomatoes can be used instead.
  • 1 to 2 tablespoons tomato paste For deeper flavor.
  • 1 teaspoon sugar or honey Optional, helps if tomatoes are sharp.
Broth
  • 2 cups broth (vegetable or chicken)
Seasoning & Oil
  • 1 to 3 tablespoons olive oil or butter
  • Salt and pepper To taste.
Finishing Touches
  • a big handful fresh basil Stir in at the end.
  • splash heavy cream, half and half, or coconut milk Add slowly until desired texture.

Method
 

Preparation
  1. In a pot, warm the olive oil or butter, then cook the onion with a pinch of salt until soft.
  2. Add garlic and stir for about 30 seconds, just until it smells amazing.
  3. Stir in tomato paste for 30 seconds to enhance flavor.
  4. Add canned tomatoes and broth. Simmer for 10 to 15 minutes.
  5. Blend the mixture until smooth and return to pot if necessary.
  6. Stir in the fresh basil and add cream slowly, adjusting to your desired texture. Season with salt and pepper.

Notes

Peeling fresh tomatoes is optional. If you choose to peel, blanch them for easy removal. This recipe is also meal prep friendly and can be frozen before adding the cream.
