Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, mix the sugar and cinnamon.
- Melt the butter and stir in the vanilla if using. Keep it warm.
Coating and Baking
- Brush the Ritz crackers with melted butter to coat them without sogginess.
- Sprinkle cinnamon sugar over the crackers and flip to coat both sides.
- Bake for 6 to 8 minutes, watching closely to prevent scorched sugar.
- Cool on the baking sheet for a few minutes before serving.
Notes
Store cooled bites in an airtight container at room temp for 2 to 3 days. Re-crisp in the oven at 300°F for about 3 to 4 minutes if they soften. For a quick batch, use an air fryer at 325°F for 2-3 minutes.
