Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix the sugar and cinnamon.
  3. Melt the butter and stir in the vanilla if using. Keep it warm.
Coating and Baking
  1. Brush the Ritz crackers with melted butter to coat them without sogginess.
  2. Sprinkle cinnamon sugar over the crackers and flip to coat both sides.
  3. Bake for 6 to 8 minutes, watching closely to prevent scorched sugar.
  4. Cool on the baking sheet for a few minutes before serving.

Notes

Store cooled bites in an airtight container at room temp for 2 to 3 days. Re-crisp in the oven at 300°F for about 3 to 4 minutes if they soften. For a quick batch, use an air fryer at 325°F for 2-3 minutes.
