Ingredients

Main Ingredients
  • 4 medium beets, preferably fresh and firm Look for beets without soft spots; both red and golden beets can be used.
Pickling Liquid
  • 1 cup white vinegar Adjust acidity according to the recipe used; apple cider vinegar can be swapped if tested.
  • 1 cup water Use filtered water for best results.
  • 1 cup sugar Adjust sweetness based on preference; some recipes may vary.
  • 1 teaspoon salt Kosher salt is preferred for flavor.
  • 1 teaspoon peppercorns Optional for added warmth.
  • 1 teaspoon spices like cloves or mustard seeds Use in moderation to avoid overpowering the beets.

Method

Preparation
  1. Wash the beets thoroughly under running water.
  2. Trim the greens and taproot, leaving a small amount of the stem to prevent bleeding during cooking.
  3. In a pot, cover the beets with water and bring to a boil. Reduce heat and simmer for about 30 minutes, or until fork-tender.
  4. Once cooked, remove beets from the pot and cool. Peel the skins once cool enough to handle.
  5. Slice the peeled beets into rounds or wedges, as preferred.
Pickling
  1. In a saucepan, combine vinegar, water, sugar, salt, and spices. Bring to a gentle simmer, stirring until sugar and salt dissolve.
  2. Pack the sliced beets into sterilized jars, leaving headspace at the top.
  3. Pour the hot pickling liquid over the beets, ensuring they are fully submerged.
  4. Seal the jars and allow them to cool at room temperature. Store in the refrigerator.
Marinating
  1. Let the beets marinate for at least 24 hours for best flavor.

Notes

Pickled beets can be stored in the refrigerator for up to 2-3 weeks. Do not assume refrigerator pickles are shelf-stable without proper storage conditions.
