Ingredients
  

Main Ingredients
  • 2 cups Chocolate chips or melting wafers, milk or semi-sweet White chocolate can also be used, reduce peanut butter slightly.
  • 1 cup Roasted salted peanuts If using unsalted, add a pinch of flaky salt.
  • 2 cups Mini marshmallows Fresh is best for chewy texture.
  • 1/2 cup Peanut butter, creamy Stir well if using natural peanut butter.
  • 1 tablespoon Neutral oil or coconut oil Optional for a glossy chocolate finish.

Method
 

Preparation
  1. Line a sheet pan with parchment paper.
  2. Melt chocolate in a heat-safe bowl using microwave bursts or a double boiler.
  3. Stir in peanut butter to loosen the chocolate and add oil if necessary.
  4. Fold in peanuts and mini marshmallows gently to preserve marshmallow shape.
  5. Use two spoons or a cookie scoop to drop mounds onto the lined pan.
  6. Chill in the fridge for 15-20 minutes or let set at room temperature until firm.

Notes

For best texture, mix clusters set at room temperature with fridge ones. Chocolate can scorch easily, so stir often and use moderate power in microwave.
