Peanut Butter Marshmallow Cups

Ingredients
  

For the chocolate shell
  • 1 cup chocolate chips or chopped chocolate bars (semi-sweet or milk chocolate) Use good quality chocolate for better flavor.
  • 1 tablespoon coconut oil or butter To help the chocolate melt smoothly.
For the filling
  • 1 cup creamy or crunchy peanut butter Creamy is easiest, but crunchy can add texture.
  • 1 pinch salt Especially if using unsalted peanut butter.
  • 2 tablespoons powdered sugar Optional, for a sweeter filling.
  • 1 teaspoon vanilla extract Optional for added flavor.
For the marshmallow layer
  • 1/2 cup marshmallow fluff The classic jar stuff, or substitute with melted mini marshmallows.

Method
 

Preparation
  1. Line a muffin tin with paper liners. Mini muffin liners work too for bite-sized cups.
  2. Melt chocolate with coconut oil or butter to allow easy spreading.
  3. Spoon some melted chocolate into each liner, swirling it up the sides, and chill until set.
  4. Mix peanut butter with a pinch of salt and optional powdered sugar, and spoon it into the chocolate shells, gently pressing it down.
  5. Add a small spoonful of marshmallow fluff on top of the peanut butter layer.
  6. Cover with more melted chocolate and tap the pan gently to smooth the tops.
Chilling
  1. Chill until firm, then peel away the liners and enjoy.

Notes

For best results, use liners, avoid overfilling, and chill between layers. Warm your spoon for easier use of marshmallow fluff.
