Method
Preparation of the Crust
- Mix graham cracker crumbs, sugar, melted butter, and a pinch of salt until it resembles wet sand.
- Press the mixture firmly into a 9-inch pie dish, using the bottom of a measuring cup to compact it.
- Chill the crust in the freezer for 15 to 20 minutes or bake at 350°F for 8 to 10 minutes, then cool.
Making the Filling
- In a bowl, combine sweetened condensed milk and key lime juice. Let it sit for a few minutes until thickened.
- In a separate bowl, whip cold heavy cream until soft peaks form.
- Gently fold the whipped cream into the lime mixture to maintain airiness.
- Taste the filling and adjust tartness with additional condensed milk or lime juice as needed.
Assembly
- Pour the filling into the prepped crust and smooth the top.
- Chill the pie for at least 6 hours or overnight to set.
Serving
- Top with whipped cream and lime zest before serving.
Notes
For best results, chill the pie overnight before serving. Covered tightly, pie can last 3 to 4 days in the fridge. Freeze only if necessary, as texture may change.
