Ingredients
  

Cookie Base
  • 1 cup creamy peanut butter Use a peanut butter that you like.
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 cups old fashioned oats Quick oats can work but old fashioned is preferred.
  • 1 cup chocolate chips
  • 1 cup candy coated chocolate pieces
  • pinch salt Optional if using unsalted peanut butter.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the creamy peanut butter and packed brown sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. Add in the baking soda and old fashioned oats, stirring until the mixture is evenly combined.
  5. Fold in the chocolate chips and candy coated chocolate pieces gently.
Baking
  1. Scoop the dough into balls (about 2 tablespoons each) and place them on the lined baking sheet with space between each.
  2. Bake for 9 to 11 minutes, until the edges are set but the centers are still soft.
  3. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, do not overbake. If using natural peanut butter, stir it well before use. Can be frozen for up to 2 months.
