Ingredients
  

Main Ingredients
  • 4-6 pieces Corn tortillas, cut into strips or small squares Preferably day or two old for better crispiness.
  • 6 large Eggs Use more if feeding hungry people.
  • 1-2 tablespoons Butter or oil for the pan To crisp the tortillas.
  • 1 handful Onion, diced Optional but recommended.
  • 1 piece Jalapeno or serrano, finely chopped Optional, for added heat.
  • 1 clove Garlic, minced Optional.
  • 1-2 cups Tomatoes diced or a couple spoonfuls of salsa Using salsa is a great time-saver.
  • to taste Salt and pepper To season the eggs.
  • a pinch Cumin or chili powder Optional.
  • 1 cup Shredded cheese Cheddar, Monterey Jack, or your choice.
Serving Extras
  • 1 piece Avocado For topping.
  • 1 sprig Cilantro For garnish.
  • to taste Hot sauce For serving.
  • 1 wedge Lime For squeezing over the top.
  • 1 serving Sour cream Optional for serving.

Method
 

Preparation
  1. Heat a large skillet over medium heat and add butter or oil.
  2. Add the tortilla pieces and stir until they're golden and crisp in spots. Adjust the heat as necessary to avoid burning.
  3. Push the tortillas to the side and add more fat if the pan looks dry. Add diced onion and jalapeno and cook for a couple of minutes until they soften.
  4. Add minced garlic and cook for about 20 seconds.
  5. Add diced tomatoes or salsa and stir until everything is warmed through.
Cooking
  1. Beat the eggs with a pinch of salt and pepper, then pour them into the skillet.
  2. Gently scramble the eggs with the other ingredients until soft and slightly shiny; remove from heat before they look completely cooked.
  3. Sprinkle cheese on top and cover the pan for 30 seconds for extra melting.

Notes

Migas can be served as a quick meal or a more elaborate brunch spread. Top with fresh avocado, salsa, or cilantro for extra flavor. Ideal for using up stale tortillas.
