Magic Cookie Bars

A quick and forgiving dessert that combines layers of graham cracker crust, chocolate, butterscotch, nuts, and coconut, all bound together by sweetened condensed milk for a gooey treat.

Ingredients
  

Crust
  • 1 cup Graham cracker crumbs Can substitute with crushed vanilla wafers or chocolate sandwich cookies.
  • 1/2 cup Unsalted butter, melted This will bind the crust together.
Layer Ingredients
  • 1 cup Chocolate chips Use semi-sweet, dark, or a mix.
  • 1 cup Butterscotch chips Can be replaced with more chocolate chips or peanut butter chips.
  • 1 cup Chopped nuts Walnuts, pecans, or chopped almonds work well.
  • 1 cup Shredded coconut Sweetened or unsweetened.
  • 1 can Sweetened condensed milk Poured evenly over the top.
Topping
  • 1/2 cup Extra coconut or chips Sprinkled on top before baking.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9 by 13 inch baking pan.
  3. Layer the chocolate chips, butterscotch chips, and chopped nuts evenly over the crust.
  4. Sprinkle the shredded coconut over the layers.
  5. Pour the sweetened condensed milk evenly over the entire mixture.
  6. Sprinkle extra coconut or chips on top if desired.
Baking
  1. Bake for 25-30 minutes or until the top is lightly golden.
  2. Let cool at room temperature before slicing. For cleaner slices, chill in the refrigerator for 45 minutes.

Notes

These bars can be made ahead of time and taste better the next day. Store in an airtight container at room temperature or refrigerate for up to a week. They can also be frozen; wrap slices individually and thaw as needed.
