Method
Making the Dough
- Stir warm water, sugar, and yeast in a bowl. Let it get foamy.
- Add flour, salt, and olive oil, then mix until it comes together.
- Knead the dough for about 5 minutes by hand until smooth and a little springy.
- Let it rise in an oiled bowl, covered, until doubled (about 45 to 60 minutes).
Preparing the Filling
- Slice ham and shred cheese, mixing them together. Optionally, add a tiny swipe of mustard if desired.
Assembling the Pockets
- Divide the dough into 8 pieces and roll each into a rectangle.
- Add ham and cheese on one side of the rectangle, fold over, and pinch the edges closed.
- Seal the edges well, pressing with fingers and crimping with a fork if desired.
Baking or Freezing
- Preheat oven to 400°F (200°C). Bake for 15 to 18 minutes until golden.
- For freezing, place shaped pockets on a baking sheet lined with parchment and freeze until solid (about 1 to 2 hours). Then transfer to a freezer bag.
Notes
These pockets can be made in advance and frozen. Bake from frozen at 375°F for 22 to 28 minutes. Avoid overfilling to prevent leaks.
