  • 4 cups chicken broth A good quality broth is crucial.
  • 2 cups egg noodles Leave room for noodle type variations.
  • 2 tbsp fresh ginger, minced Fresh ginger is preferred for better flavor.
  • 3 cloves garlic, minced Adjust according to taste.
  • 1 cup vegetables (optional) Such as spinach or mushrooms for added nutrition.
  • 1 tbsp soy sauce Optional for added flavor.

Method

Preparation
  1. In a large pot, combine chicken broth, ginger, and garlic. Bring to a simmer.
  2. Add the chicken and cook for 20 minutes or until fully cooked.
  3. Remove the chicken, shred it, and set aside.
  4. In the same pot, add the noodles and cook according to package instructions.
  5. If using vegetables, add them a few minutes before the noodles are done.
Serving
  1. Once the noodles are cooked, return the shredded chicken to the pot and stir in soy sauce.

Notes

For a spicier version, consider adding chili flakes or other spices. Store leftovers in the refrigerator for 3-4 days, but note noodles may become mushy.
