Ingredients
  

Main ingredients
  • 3 large large eggs
  • 1/2 cup milk (whole or any type) Whole milk gives the nicest texture.
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar Optional, but adds sweetness.
  • 1/2 teaspoon salt
  • 3 tablespoons butter For greasing the skillet.
Optional add-ins
  • vanilla, cinnamon, lemon zest Customize the flavor as desired.

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Place your skillet in the oven to warm it up.
  3. In a bowl, whisk together the eggs, milk, flour, sugar, and salt until smooth. Using a blender for 15 seconds is an option for a smoother batter.
  4. Take the hot skillet out of the oven, add the butter, and swirl it until melted.
Baking
  1. Pour the batter into the buttery skillet and return it to the oven.
  2. Bake for 14 to 18 minutes. Avoid opening the oven door to check during baking.
Serving
  1. Remove from the oven and serve immediately. Expect it to deflate slightly as it sits.

Notes

Ensure the skillet is hot to achieve maximum puffiness. Room temperature ingredients are ideal, but cold ones can still work. Avoid overbaking and do not open the oven door during baking.
