- Heat a large skillet over medium heat and add the oil.
- Add the diced potatoes to the skillet, season with salt, pepper, garlic powder, and paprika. Stir and let them brown.
- Add a splash of water and cover. Allow potatoes to cook for 4 to 6 minutes.
- Push the potatoes to the side, add a bit more oil if needed, then add onion and bell pepper. Cook for 3 to 4 minutes.
- Stir in the smoked sausage and cook for about 4 to 6 minutes until browned.
- Taste and adjust seasoning if needed. If using cheese, sprinkle and cover for 1 minute to let it melt.
Notes
This dish keeps well as leftovers. Store in an airtight container in the fridge for up to 4 days. Reheat in a skillet for the best texture.
