Ingredients
  

For the Cake
  • 2-3 layers Cake layers Baked and cooled
For the Frosting
  • 1 batch Buttercream frosting A simple buttercream, split into bowls
  • 1 bowl White frosting Set aside one third of the buttercream
  • 2 bowl Blue frosting Tinted in two shades: light blue and deep blue
  • 2 bowl Pink frosting Tinted in two shades: light pink and deep pink
Equipment
  • 1 Turntable or lazy Susan For smooth sides
  • 1 Bench scraper or icing smoother To blend the colors
  • 1 Offset spatula For spreading and touch-ups
  • 3-4 bowls Tinted frosting Plus one for white frosting
  • 1 packet Gel food coloring (blue and pink) Gel is recommended for stronger colors
  • 1 round Cardboard cake round To help stabilize the cake

Method
 

Preparation
  1. Bake two or three cake layers and let them cool completely.
  2. Level the tops of the cakes if they are domed, so they stack straight.
  3. Mix your buttercream and set aside about one third as white frosting.
  4. Tint the remaining frosting into blue and pink shades.
  5. Stack the cake with frosting between layers and chill it for 10 minutes.
Frosting Application
  1. Apply a thin crumb coat and chill again for 15 to 20 minutes.
  2. Spread thick horizontal bands of color around the sides.
  3. Smooth with a bench scraper, cleaning it often, until the gradient looks soft.
  4. Smooth the top by pulling frosting toward the center, then tidy the top edge.
  5. Add decorations like sprinkles or rosettes if desired.

Notes

Keep frosting textures consistent for a smooth blend. If frosting is too stiff, add a splash of milk. Chill the cake to prevent warm kitchen issues.
