Ingredients
  

Beef and Seasoning
  • 1 to 1.5 pounds ground beef (80 or 85 percent) Use lean beef for less grease.
  • 1 tablespoon olive oil Only if using very lean beef.
  • 2 to 3 teaspoons chili powder Adjust to taste.
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika Optional but recommended.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • to taste salt and pepper Adjust to preference.
  • 1/3 cup water Helps keep beef juicy.
Lettuce Base
  • 1 head Romaine, iceberg, or butter lettuce Use as the base for bowls.
Toppings
  • to taste shredded cheese
  • to taste sour cream or plain Greek yogurt
  • to taste avocado or guacamole
  • to taste salsa or pico de gallo
  • to taste pickled jalapenos
  • to taste chopped cilantro and lime wedges

Method
 

Cooking the Beef
  1. Heat a skillet on medium high. Add the ground beef and break it up with a spoon. Cook until it is no longer pink.
  2. If there is excess grease, carefully drain it, leaving some for flavor.
  3. Add chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper to the beef. Stir to coat evenly.
  4. Pour in the water and let it simmer for 2 to 3 minutes to help the seasoning cling to the meat and keep it juicy.
Assembling the Bowls
  1. Chop the lettuce and place it into each bowl.
  2. Spoon the hot seasoned beef over the lettuce.
  3. Add desired toppings such as cheese, salsa, sour cream, and avocado.

Notes

Do not dress the lettuce early to maintain its crunch. Customize toppings to fit your dietary needs.
