Easy Icebox Cake

Main Ingredients
  • 1 box box of graham crackers
  • 2 small boxes instant vanilla pudding mix
  • 3 cups cold milk
  • 1 tub whipped topping (or homemade whipped cream) Can use homemade whipped cream
Optional Toppings
  • fresh fruit (strawberries, blueberries, peaches, etc.) Can also use chocolate chips, lemon zest, or chocolate syrup

Method
 

Preparation
  1. Use a 9x13 dish for larger servings or an 8x8 for a smaller batch.
  2. Whisk the pudding mix with cold milk for about 2 minutes, until it thickens. Let it sit for 3 to 5 minutes.
  3. Gently stir in about two thirds of the whipped topping to make the filling light and fluffy.
  4. Put down a layer of graham crackers on the bottom of the dish.
  5. Spread a thick layer of the pudding mixture over the crackers.
  6. Continue layering with graham crackers and pudding mixture, ending with a layer of pudding on top.
  7. Spread the remaining whipped topping on top or save it for serving.
  8. Cover and refrigerate for at least 6 hours, preferably overnight.

Notes

For cleaner slices, chill overnight and use a sharp knife wiped clean between cuts. For a 'scoop and eat' vibe, 6 hours is sufficient. Use fresh fruit cautiously to prevent sogginess, and feel free to mix different fruits for variety.
