Ingredients
  

For the Dressing
  • 6 cups Cornbread, baked and cooled, crumbled Day old cornbread works best.
  • 1 cup Onion, chopped small
  • 1 cup Celery, chopped small
  • 1/2 cup Butter For sautéing the veggies.
  • 4 cups Chicken or turkey broth Add more if needed.
  • 2 large Eggs, lightly beaten Helps bind the dressing.
  • 1 tbsp Sage, dried Basic pantry seasoning.
  • 1 tbsp Poultry seasoning
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1/2 tsp Garlic powder Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, cooking until softened, about 5-7 minutes.
  3. In a big bowl, combine the crumbled cornbread, the sautéed onion and celery, sage, poultry seasoning, salt, and pepper.
  4. Pour in the chicken or turkey broth and mix well. The mixture should be moist but not soupy.
  5. Taste the mixture and adjust the seasoning if necessary.
  6. Gently fold in the beaten eggs until combined.
  7. Transfer the mixture to a greased baking dish and smooth the top.
  8. Cover with foil and bake in the preheated oven for 30 minutes. Remove the foil for the last 10-15 minutes to allow the top to brown.
  9. Check for doneness; the center should not jiggle and the top should be golden.

Notes

For best results, make sure the cornbread is well-seasoned and use enough broth to keep the dressing moist. Can be made ahead of time by refrigerating or baking in advance.
