Ingredients
  

Main Ingredients
  • 8 oz Cream cheese, softened Use block style cream cheese, not whipped.
  • 1 cup Unsalted butter, softened Ensure it's softened, not melted.
  • 1 cup Granulated sugar
  • 1 large Egg
  • 1 tbsp Vanilla extract
  • 1/2 cup Unsweetened cocoa powder Can use Dutch process for deeper flavor.
  • 2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Powdered sugar for rolling
  • optional Chocolate chips or espresso powder For extra depth.

Method
 

Preparation
  1. Cream together the butter, cream cheese, and sugar until smooth.
  2. Mix in the egg and vanilla.
  3. Stir in flour, cocoa powder, baking powder, and salt until you get a thick dough.
  4. Cover and chill for at least 1 hour so the dough is scoopable.
Baking
  1. Scoop dough into balls and roll generously in powdered sugar, then place on a lined baking sheet.
  2. Bake until the edges look set but the centers still look soft, about 10-12 minutes.
  3. Cool for 10 minutes on the tray, then move to a rack.

Notes

Chill the dough for the best texture. Avoid overbaking to ensure a gooey center. Rolling twice in powdered sugar helps achieve a nice crinkle appearance.
