Ingredients
  

Batter Ingredients
  • 1 cup all purpose flour
  • 1 cup granulated sugar plus 1 tablespoon for the top
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1 cup milk, room temperature
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter, melted slightly cooled
Cherry Filling
  • 1 can cherry pie filling, about 21 ounces
  • 1 teaspoon lemon zest optional
  • 1 teaspoon cornstarch optional, for thicker fruit layer
  • 1-2 tablespoons sliced almonds optional, for nutty touch

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease an 8 by 8 inch baking dish or a 9 inch cast iron skillet.
  2. In a bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
  3. Add in milk, vanilla, and melted butter, stirring until just combined. Do not overmix.
  4. If desired, stir lemon zest and cornstarch into the cherry pie filling.
Assembly
  1. Pour the batter into the prepared pan, then spoon the cherry filling on top in even dollops. Do not stir.
  2. Sprinkle the remaining tablespoon of sugar over the top and add sliced almonds if desired.
Baking
  1. Bake for 40 to 45 minutes, until the top is golden and the cherries are bubbling around the edges.
  2. Cool for at least 10 minutes before serving.

Notes

Serve warm with vanilla ice cream for extra comfort. The recipe is customizable with fresh or frozen cherries, and you can adjust sweetness by reducing sugar.
