Preparation
- Slice beef thinly against the grain. If needed, freeze for 15 minutes to make slicing easier.
- In a small bowl, mix together the sauce ingredients: soy sauce, oyster sauce, brown sugar, cornstarch, and beef broth or water.
Cooking
- Heat a large skillet or wok until hot, then add the neutral oil.
- Sear the beef in a single layer, cooking in batches if necessary, and remove to a plate once browned.
- Add a bit more oil to the pan, then sauté the garlic and ginger for about 20 seconds.
- Add the broccoli and a splash of water, then cover for 2 to 3 minutes to steam until bright green.
- Return the beef to the pan, pour in the sauce, and stir until it thickens and coats everything.
Notes
Serve over jasmine rice or noodles. For added flavor, finish with a small splash of sesame oil.
