  • 8 oz imitation crab, chopped or flaked Can use either flake style or sticks.
  • 1/3 cup mayonnaise Provides creaminess.
  • 2 tbsp sour cream or plain Greek yogurt Optional, for a lighter tang.
  • 2 to 3 tbsp fresh lime juice Adjust to taste.
  • 1/2 tsp lime zest Optional but adds flavor.
  • 1/2 cup celery, finely diced For crunch.
  • 2 to 3 tbsp green onion, sliced Can substitute with red onion.
  • 1/4 tsp salt Plus more to taste.
  • to taste black pepper Adjust according to preference.
  • pinch sugar or 1/2 tsp honey Balances the lime flavor.
Optional Add-ins
  • chopped cilantro
  • diced jalapeno
  • hot sauce For extra spice.

Method
 

Preparation
  1. In a bowl, mix mayo, sour cream or yogurt (if using), lime juice, zest, salt, pepper, and a tiny pinch of sugar or honey.
  2. Add crab, celery, and green onion. Gently mix until coated.
  3. Chill for 15 to 20 minutes if you have time. Taste again and adjust lime, salt, or pepper.
Serving
  1. Serve in a bowl, as a sandwich filling, or on tostadas.

Notes

Use fresh lime juice for better flavor. Don't overmix to avoid mushy crab. Keep it cold for the best taste.
