Preparation of Filling
- In a mixing bowl, combine ground pork, salt, soy sauce, grated ginger, chopped green onions, sesame oil, and cornstarch.
- Mix gently until just combined; do not overmix.
Wrapping Wontons
- Place a teaspoon of the filling in the center of a wonton wrapper.
- Wet two edges of the wrapper with water, fold it into a triangle, and press the edges to seal tightly.
- If desired, curl the corners together and pinch to secure.
- Repeat until all filling is used; dust with flour if the wrappers stick.
Cooking the Broth and Wontons
- In a large pot, bring low-sodium broth to a boil. Add slices of ginger, crushed garlic, soy sauce, and white pepper.
- Add dried shiitake mushrooms if using, and simmer for five minutes.
- Drop the wontons gently into a separate pot of boiling water and cook until they float, about 3-4 minutes.
- Transfer wontons to the broth and simmer for an additional 2-3 minutes.
- Garnish with chopped green onions before serving.
Notes
Easily freeze extra wontons for quick meals. Adjust fillings to your preference. For clearer broth, cook wontons separately.
