  • 1 cup Arborio rice Classic risotto rice.
  • 2 cups Wild mushrooms (shiitake, oyster, maitake, etc.) Use a mix for best flavor.
  • 1 Onion or shallot For sweetness.
  • 2 cloves Garlic Enhances mushroom flavor.
  • 4 cups Broth Chicken or vegetable, warmed.
  • 1/2 cup White wine Optional, for brightness.
  • 2 tablespoons Butter For richness.
  • 2 tablespoons Olive oil
  • 1/2 cup Freshly grated Parmesan cheese Pre-shredded does not melt as smoothly.
  • to taste Salt
  • to taste Black pepper
  • optional Thyme or parsley For garnish.

Method
 

Preparation
  1. Warm your broth in a small pot over low heat.
  2. In a wide pan, heat olive oil and butter. Add mushrooms and cook until golden brown. Season with salt and pepper, then remove from the pan.
  3. In the same pan, add more butter if needed, then cook onion or shallot until soft. Add garlic and cook for 30 seconds.
  4. Add Arborio rice and stir for about a minute until coated.
  5. Pour in white wine (if using) and stir until mostly evaporated.
  6. Add warm broth one ladle at a time, stirring often until absorbed. Continue until rice is tender, about 18-22 minutes.
  7. Stir the mushrooms back in, remove from heat, and mix in butter and Parmesan. Adjust seasoning as needed.

Notes

For best results, keep the broth warm and adjust the consistency of the risotto with additional broth if it gets too thick. Leftovers can be reheated gently with a splash of broth.
