  • 2 ounces white rum Use light rum, coconut rum can be sweeter.
  • 0.5 ounces fresh lime juice Always use fresh lime juice.
  • 0.5 ounces simple syrup Start small and adjust to taste.
  • 2-3 ounces unsweetened coconut milk Shake the can before opening; use light coconut milk for a lighter drink.
  • handful fresh mint leaves Use tender leaves, avoid woody stems.
  • crushed ice crushed ice Key for texture and dilution.
  • splash soda water Adds lift and sparkle.

Method
 

Preparation
  1. Start with a sturdy glass or a small pitcher if making multiple servings.
  2. Add a handful of fresh mint leaves, a spoon of sugar or simple syrup, and the juice of half a lime.
  3. Gently muddle the mixture to release the oils from the mint.
  4. Pour in a good splash of white rum and a generous pour of unsweetened coconut milk.
  5. Give it a quick stir until it looks creamy.
  6. Pile in crushed ice, top with a little soda water, and stir again until the glass feels frosty to the touch.
Garnishing
  1. Make it festive by tucking a few sugared cranberries on a skewer or float a thin slice of lime on top.
  2. Add a small sprig of mint for decoration.

Notes

Chill your rum, coconut milk, and soda water in advance to enhance the drink's coldness.
