  • 4 cups cubed watermelon Seedless watermelon is easier, but any kind works. Cold watermelon is best.
  • 1 cup crumbled feta cheese Use blocks of feta for creaminess.
  • 1/2 cup fresh mint Tear or slice it thinly; a little goes a long way.
  • 2 tablespoons fresh lime juice Adds brightness and keeps it from tasting flat.
  • 1 tablespoon olive oil Optional, but helps coat the other ingredients.
  • to taste pinch salt Use sparingly as feta is already salty.
  • to taste pinch black pepper Adjust according to preference.

Preparation
  1. Chill your watermelon if possible to enhance freshness.
  2. Cut the watermelon into bite-sized cubes, aiming for about 1-inch pieces.
  3. Place the watermelon in a large bowl and crumble or cube the feta over the top.
  4. Add the chopped mint, tearing a few leaves for aroma and natural appearance.
  5. Drizzle with lime juice and olive oil, if using.
  6. Toss gently to combine. Be careful to keep the watermelon intact and the feta from turning into a paste.
  7. Taste the salad and adjust seasoning with black pepper and a tiny pinch of salt if necessary.

Notes

For best results, prepare the watermelon ahead of time and keep it cold. Add feta, mint, and dressing right before serving to prevent excess liquid.
