Ingredients

  • 1 box vanilla cake mix or your favorite homemade recipe
  • 3 large eggs as called for on the cake box
  • 1 cup water as called for on the cake box
  • 1/3 cup oil as called for on the cake box
For the icing
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar increase for sweetness
  • 2 teaspoons vanilla extract use high-quality
  • 2-3 tablespoons milk to achieve desired icing texture
For decorating
  • 1 cup mini marshmallows for snowman heads
  • 1 cup regular marshmallows for chubby bellies
  • 1/2 cup mini chocolate chips for eyes and buttons
  • 1/4 cup orange sprinkles or small candies for noses
  • 4-6 sticks pretzel sticks for arms
  • 1 cup colored sanding sugar or coconut flakes for snow dusting effect

Method
 

Preparation
  1. Preheat your oven and prepare a muffin tin with liners.
  2. Mix the vanilla cake batter according to the box instructions.
  3. Pour the batter into the liners, filling them about two-thirds full.
Baking
  1. Bake until golden and a toothpick inserted comes out clean.
  2. Remove from the oven and let cool on a cooling rack.
Icing Preparation
  1. In a mixing bowl, combine softened butter and powdered sugar to make the icing.
  2. Add vanilla extract and milk, mixing until you achieve a smooth consistency.
Assembly
  1. Place a big marshmallow on top of the cupcake as the belly.
  2. Add a small marshmallow as the head, securing with icing.
  3. Use icing to pipe on scarves and add mini chocolate chips for buttons and eyes.
  4. Insert an orange sprinkle or candy for the nose and pretzel sticks for arms.
  5. Optionally, sprinkle with colored sanding sugar or coconut flakes for a snow effect.
